Hot potato!

I've been on a cooking roll lately, it doesn't happen that often, but I've been motivated. I made the kiddos some potato pancakes today (I'm trying to perfect the recipe before my parents get here, DziaDzio loves them!). They were actually really super easy to make, minus the peeling/grating of the potatoes and onion. The grater/peeler and I are not friends. I was actually surprised that I did not grate or peel any section of my hand or finger into the potato mixer. I'm considering putting that on the calendar FYI.

Ok, here's what you need:
4 potatoes peeled and grated (please be careful so you don't pull a "me" and grate/peel half you hand into the bowl)
1 onion grated
1 egg
2 tablespoons of flour
Salt
Pepper
Vegetable Oil (I usually use olive oil, but I actually used veggie oil on this)

For the potatoes and onions you want to grate them over a strainer and really get all the liquid out. Now this will probably cause your hands to smell like onion for the remainder of the day, but trust me, it's totally worth it.
Mix the onion, potato, egg, flour, salt and pepper together in a bowl until completely mixed.


Now during this time you want to coat the bottom of your pan with the veggie oil and start heating it up.
When the oil is hot put in a heaping spoonful and cook them until they are golden on each side.

After they are done cooking I would put them on a paper towel lined plate to soak up any additional oil. You can serve these with either sour cream or apple sauce. (I know I don't have an after picture, sorry the kiddos were screaming for lunch).

Now about cooking with oil, I have to share this. I worked for a property management company before the kiddos were born and the apartment complexes housed students that were working at Disney. For some of these kids it was their first time living away from Mom and Dad and they had absolutely no clue what they were doing. During my training I had to sit through the orientation presentation that all the students sat through. I actually was one of these kids many moons ago, and the speech hadn't changed so I really didn't pay that much attention. But the part that kills me is they talk about fire extinguishers, at great length too, and grease fires. I think they tell the kids that if a grease fire starts you put the lid on, don't use water, put the lid on at least 10 times during the presentation. You would think it would stick, right? Wrong. So one night my dear hubby (who was their security director at the time) had to respond to a call of a kitchen fire. Now, these students were making fried chicken, you know the kind, good old fashioned fried chicken. The problem was they SUBMERGED the chicken in the oil, almost as if they were deep frying it and then they WALKED AWAY! Apparently this was something that needed to be mentioned in the "talk". As if that wasn't bad enough the most intelligent of the group, and I use that term very loosely, grabbed the sprayer from the sink and tried to put the fire out. Needless to say 3 apartments were ruined and I had a big stack of paperwork the next morning. Scott also had to have his eyes flushed by the paramedics because of the amount of smoke (oh those clothes were a joy to wash by the way). So long story short, don't do that, ever, ever EVER! :)

Oh yum! Serving them with apple sauce sounds really delicious. scary story about the fried chicken! Promise I'll never do that!

Did I ever tell that you that one of my friends was Pluto and she used to live in a housing like what you are talking about. Hmmm, I wonder if it was her. Kidding, she never mentioned burning down an apartment.
