Fiesta Taco Soup

I made another recipe from the 150 Healthiest Meals in 15 minutes, and this one is out of this world! The Fiesta Taco Soup is really easy to make and is full of fiber (translation, maybe just eat one bowl). It literally tastes like you're having a taco, just no shell. You can always add tortilla strips for that crunch, which I think I may try next time. Here's what to do:


You need:
  • 2 teaspoons olive oil
  • 1 lb ground turkey
  • 1 teaspoon prepared minced garlic (or 2 cloves minced)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon ground black pepper
  • 2 cups frozen corn
  • 1 can (15 oz) kidney beans undrained
  • 1 can (15 oz) pinto beans undrained
  • 1 can (15 oz) black beans undrained
  • 2 cans (14.5 oz) fire roasted diced tomatoes
  • 1 small can diced green chiles undrained
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch dressing

What to do:
  • Heat oil in a large soup pot over medium heat.
  • Add turkey, garlic, salt and pepper, mix well. Cook, until there is no pink left in turkey (about 8 minutes).
  • Add the corn, three types of beans, tomatoes, chiles, taco and ranch seasonings.
  • Mix well.
  • Fill one empty can with water and add it twice (two cans of water).
  • Increase the heat and bring to a boil.
  • Lower heat, cover and simmer for 30 minutes.

Yield: 12 servings
Per serving 460 calories, 5g fat, 31g protein, 74g carbs, 24g dietary fiber, 30mg cholesterol, 468mg sodium
