A friend of my posted this recipe 2 years ago on Facebook and it quickly became a family favorite. By family, I most certainly mean Scott. The recipe is for bread, but I usually make it in muffin form. I also switched up the recipe a bit and made it with half whole wheat flour.
Here's what you need:
4 cups flour (if doing whole wheat, do 2 cups white flour, 2 cups whole wheat)
1 Tablespoon baking soda
1/4 teaspoon baking powder
1 1/2 teaspoon salt
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
5 eggs
2 cups of sugar
1 cup brown sugar
1 cup applesauce
1/2 cup oil
1 Tablespoon vanilla
2 cups zucchini shredded
1 cup of Apple, peeled and diced
Here's what to do:
Combine first 6 ingredients set aside
Combine eggs, applesauce, oil, sugar, vanilla in large bowl beat well
Stir in Zucchini and apples to wet ingredients
add dry ingredients and mix until combined
Bake 50-55 minutes if you are strictly making bread or 20-22 minutes for muffins
If you are doing muffins you'll make 24 and still have batter left over. I made two mini loaves this last time. Scott pretty much died when he came home and saw these. They are super yummy, I hope you enjoy them as well!
