Chicken A La King Kebabs


Welcome to another What's Cookin' Wednesday with the lovely Heather from Life As We Know It! My recipe for this week came from Rocco DiSpirito, who like this recipe, is delicious. In his recipe he uses turkey but I couldn't find just plain turkey meat, so I used chicken. To be perfectly honest I have no idea what Chicken a la King is supposed to taste like, or what it normally looks like for that matter, but this recipe is flippin' amazing.


Here's what you need:
  • 1lb turkey (or chicken) breast meat cut into 1-inch chunks
  • 1 large green bell pepper seeded and cut into 1-inch pieces
  • Salt and pepper
  • Nonstick cooking spray
  • 1 small yellow onion, cut into a fine dice
  • 1 cup low-fat, low-sodium chicken broth
  • 1 tablespoon cornstarch
  • 1/4 teaspoon celery seeds
  • 1/2 cup frozen peas
  • 1/3 cup Greek yogurt
What to do:
  • Season the meat with salt and pepper
  • Spray your skewers with nonstick spray, makes it easier when you go to slide everything off
  • Skewer your meat and peppers
  • Grill the kebabs until they are done (like 20 minutes)
  • While you kebabs are grilling heat a small saucepan over medium heat and when it is hot spray with nonstick cooking spray
  • Add your onion and saute until almost translucent (about 4 minutes)
  • While the onions are sauteing, whisk together your chicken broth and cornstarch
  • Whisk the broth mixture in with your onions, stir constantly and bring to a boil
  • Add the celery seeds and peas and return sauce to a simmer
  • Cook until thickened (about 4 minutes)
  • Remove sauce from heat and add Greek yogurt.
  • Season sauce with salt and pepper
  • Serve the sauce either on the kebabs or on the side
I made this on Sunday when my friend Jenn came over and everyone loved it. Hope you like it too!

I love that you always have a sauce to go with whatever you make! I love sauces! At Chick-fil-a I had the person ask me once, "Would you like some food with your sauce?" Ha! This looks really yummy! I got the fixings to make that jerk chicken dish of yours this week!
