Here's what you need:
- 1lb bacon, roughly chopped
- 1 medium yellow onion, diced
- 1 large carrot, peeled and diced
- 3/4 cup diced celery (I peel my celery, got the tip from Emeril it makes it sooooo flavorful!)
- 4 large russet potatoes, peeled and diced
- 4 medium red potatoes, diced (I peeled mine, you can do whichever)
- 1/4 cup of flour
- 2 cup of chicken or vegetable stock (I used chicken)
- Coarse salt and freshly ground pepper, to taste
- 4 cups of heavy cream
- In a 6 to 8 quart stockpot over medium heat, fry bacon until crisp.
- Remove bacon and drain on paper towels (reserve half for garnish). In bacon fat, cook onions, carrots and celery until onions are translucent. Add potatoes and cook for 4 minutes, stirring occasionally.
- Sprinkle in flour and stir constantly over low heat about 5 to 7 minutes until the mixture has thickened slightly. Add stock and half of the bacon. Season with salt and pepper.
- Over medium-high heat, bring the soup to a simmer and cook for 25 minutes, or until potatoes are soft. Mash some of the potatoes for thicker, creamier texture. Add cream and simmer for 5 minutes.
- Adjust thickness by adding water or stock. Soup should have a creamy consistency.
- Season to taste, and garnish with toppings (chives, bacon, sour cream, cheese).
- Slightly freeze bacon so it is easier to chop
- After chopping potatoes soak them in cold water so they don't turn brown.

Yum!!! Your picture made my mouth water! I made a huge batch of baked potato soup from a recipe I found on Allrecipes. It was pretty good but my husband wasn't wild about it.
