Loaded Baked Potato Soup

I found another great soup recipe in my Delicious Disney cookbook, it's Loaded Baked Potato Soup from Carnation Cafe at Disneyland.


Here's what you need:
  • 1lb bacon, roughly chopped
  • 1 medium yellow onion, diced
  • 1 large carrot, peeled and diced
  • 3/4 cup diced celery (I peel my celery, got the tip from Emeril it makes it sooooo flavorful!)
  • 4 large russet potatoes, peeled and diced
  • 4 medium red potatoes, diced (I peeled mine, you can do whichever)
  • 1/4 cup of flour
  • 2 cup of chicken or vegetable stock (I used chicken)
  • Coarse salt and freshly ground pepper, to taste
  • 4 cups of heavy cream
What to do:
  • In a 6 to 8 quart stockpot over medium heat, fry bacon until crisp.
  • Remove bacon and drain on paper towels (reserve half for garnish). In bacon fat, cook onions, carrots and celery until onions are translucent. Add potatoes and cook for 4 minutes, stirring occasionally.
  • Sprinkle in flour and stir constantly over low heat about 5 to 7 minutes until the mixture has thickened slightly. Add stock and half of the bacon. Season with salt and pepper.
  • Over medium-high heat, bring the soup to a simmer and cook for 25 minutes, or until potatoes are soft. Mash some of the potatoes for thicker, creamier texture. Add cream and simmer for 5 minutes.
  • Adjust thickness by adding water or stock. Soup should have a creamy consistency.
  • Season to taste, and garnish with toppings (chives, bacon, sour cream, cheese).
Some tips:
  • Slightly freeze bacon so it is easier to chop
  • After chopping potatoes soak them in cold water so they don't turn brown.
I wish I would have made a double batch, this soup is sooooooooooo good! Happy eating!!!

Yum!!! Your picture made my mouth water! I made a huge batch of baked potato soup from a recipe I found on Allrecipes. It was pretty good but my husband wasn't wild about it.

Your recipe sounds a lot better! I'm gonna try this next time I make potato soup!

I just ate this at the carnation cafe, and shared it with my one yr old . WE LOVED IT!! Thank you for sharing :) (I took pictures of my soup too lol)
