Thanksgiving 2015

Just in time for Christmas, I am finally posting about Thanksgiving...


Scott and I hosted Thanksgiving at our house this year and it was definitely a full house. There were 12 of us in our little house. My brother and his family came over and my nephew and his wife came down from Jacksonville. 

Scott had to work so we had a later dinner, but it gave us plenty of time to snack and chat. Dinner itself was pretty friggin' delicious if I do say so myself. I really didn't take any photos during the day because I was either cooking or trying to take everything in. 

I am so thankful for this past Thanksgiving. My house was definitely full and I loved every moment of it.

Thanksgiving Part 2


Let's continue the family Thanksgiving trip, shall we? (Sorry for the HUGE delay)

My brother and his family arrived on Saturday evening and we were able to spend Sunday in the parks together. While the big kids rode roller coasters, my Dad, Scott and Aaron rode Star Wars (Dad was the rebel spy!) and Jill, Mom and I went on our favorite, The Great Movie Ride.

After a few more rides we headed to Prime Time Cafe for lunch. They were slammed and running behind on reservations, so we spent a bit of time just hanging out in front of the restaurant. I was able to snag this great photo of my Dad, just smiling and living in the moment. This trip was a huge highlight for him and something that he talked about for months. He was so excited to spend time with the kids and grandkids.

Lunch had a bumpy start, but we had an amazing server who made up for the bumps. After our lunch we all headed over to Toy Story, where Scott dominated, and then made our way for the lights.

This is the last year for the Osbourne Family Lights, so it was packed. Some of my favorite holiday memories are in this area and I was thrilled we had one more chance to see them.

We spent a good chunk of the time in the lights looking for a hidden image. It was pretty cool really looking at all of the lights, we found so many hidden lights (like Nemo and the Incredibles) that we probably would have never noticed had we not just stopped to look.

Thanksgiving Part 1

My parents came down for Thanksgiving this year and the kiddos were able to spend a few days with them at the resorts. We all meet up for breakfast at O'Hana's on their first day. The kiddos are not huge character meet and greet fans, but they loved it.


I think Busia and Dzia Dzio may have enjoyed it just as much if not more than the kiddos. 

After our super yummy breakfast we spent the day at Animal Kingdom. Jill is a huge fan of the Wilderness Explorer program that they have there, so we had to participate. I think everyone enjoyed learning about the different animals.

Thanksgiving Thursday - Thanksgiving Edition 2014


For those of you that don't know what Thanksgiving Thursday is, it is the one time during the week where you stop and basically count your blessings. Even if you've had one of those weeks, I promise you can find at least one thing to be thankful for, no matter how big or small.

Today, though, it is a reflection back on a year of blessings.

This year I am thankful for:

  • The opportunities Scott has had this past year. His role at work has grown so much and I am beyond proud of him. I am also thankful that he has made the commitment to live a healthier lifestyle. 
  • Aaron who has grown so much in this last year. I am proud of the little man he is becoming. I am thankful for his cuddles, his morning kisses and his jokes.
  • Jillian who also has grown so much in this last year. I am proud of the little lady that she is becoming. I am thankful for our runs together and our girl chats. 
  • Our families. We are so lucky to have so many family members near and far. Sometimes we are a little dysfunctional, but hey, we put the fun in dysfunctional. 
  • Our jobs. We are both so lucky to have careers that we love and are able to provide for our family.
  • Amazing teachers and coaches for our kids. We really hit the jackpot this year.
  • Our friends. We are really lucky to have a great group of friends around us.
  • A great running buddy who makes sure my butt is up on Saturday morning.
  • So many more things that I am drawing a blank on right now. We are so incredibly lucky and blessed.

The Weekend I Ate A Lot of Stuffing

I just had four days off from work. Four days. That's like an eternity. I'm not totally sure what I accomplished in those four days, but I do know I did not get to sleep in, which is bogus.

Thursday morning we were up before 6 a.m., I feel like that should be illegal. The kiddos did help me that morning with the apple pie for dessert and then we all snuggled up to watch the Macy's Thanksgiving Day Parade.

We tuned into the parade before it officially kicked off, so we were able to watch a lot of the Broadway productions. Now, I know there was a lot of controversy around the Kinky Boots performance, but that is not what had my daughter up in arms (she was actually jealous of all the men in boots, because she wanted their shoes). What had my daughter upset? The Sound of Music performance. To quote Jillian, "Um, that's not who sings that song. That's not right." Preach on sister.
Neither child made it all the way through the parade. I think we lost Aaron a good 15 minutes before Santa and poor Jillian was out minutes before the big guy made his appearance. To say she was upset would be an understatement. I heard about the fact that she missed him all day long.

After they woke up we headed up to Mimi and PawPaw's to help finish up dinner and wait not so patiently for Scott to come home (yes, he had to work).  Dinner was super delicious and I'm fairly certain I ate my body weight in stuffing. No really. If you were to look at my plate it would be 10% turkey, 10% cranberry, 5% gravy, 15% sweet potatoes, 10% cornbread dressing and 50% bread stuffing.

Scott and I had the bright idea to put up our Christmas tree that night so the kiddos and I could decorate it the next morning. Well, that 10% of turkey kicked my butt, so I supervised from the couch. Jillian was also up and supervised thisclose to the her father. I wasn't sure if the tree would continue to go up at that point, but thankfully it did.

The next morning Jillian was up at 5:15. Yes, as in a.m.  She wanted to start decorating the tree. Yes, at 5:15 a.m. I reminded her that Mommy needs at least 1.5 cups of coffee prior to any kind of activity. She stared at me while I drank my coffee and then sprung into action. I will give it to the kiddos, they had the tree decorated in record time and I only had to move a few ornaments.

Friday was also Scott's birthday. We met up with his parents for dinner and then came home for some cake. The kiddos love decorating cakes for him and were beyond excited for him to open his present.

Saturday I was up early again to meet my friend Michelle for a 6 mile run. I didn't really mind getting up early, because I really wanted to get this run in. After all, I did consume copious amounts of stuffing. We crushed our previous 6 mile time  by 5 minutes, which is a huge success in my book.

Later that day we went over to Michelle's house to watch the FSU vs UF game and celebrate Scott and Harley's birthdays. Scott and Harley have been friends since high school and their birthdays are a day apart and always during the rivalry game. It was perfect.

Michelle and I pulled off the ultimate surprise and surprised the guys with an FSU cake. Okay, well Scott was surprised because Harley saw it. Still, surprised.

Can we take a second and break from my weekend to discuss the Auburn vs Alabama game? I mean holy crap that was amazing.

Okay, back to me. Today was pretty chill. We really didn't do anything and I'm completely fine with that. I am suffering from stuffing withdrawal though. I'm hoping that half gallon of peppermint ice cream will dull the pain.

Thanksgiving Thursday - Thanksgiving Edition


For those of you that don't know what Thanksgiving Thursday is, it is the one time during the week where you stop and basically count your blessings. Even if you've had one of those weeks, I promise you can find at least one thing to be thankful for, no matter how big or small.

Today, though, it is a reflection back on a year of blessings.

This year I am thankful for:

  • Scott who does so much for us every day. Some of it may seem to go unnoticed, but believe me, I always notice when he helps me throughout the day. I am thankful that he makes dinner every night during the week, that he takes the kiddos to school, that he is always there to listen and offer advice, that he is there when I just need someone to lean on. I love you and am thankful for you every day.
  • Aaron who is my cuddle bug, my helper, my running buddy, my joke teller and one of my biggest blessings.
  • Jillian who is my silly girl, my artist, my helper and one of my biggest blessings.
  • Family that is all around us. I am so thankful to have so many members of our families with us and thankful for the moments we have together. 
  • A roof over our heads, food in our pantry and all of the other luxuries that we have. These are normally taken for granted and it is so important to be thankful for these.
  • Those who cannot be home for Thanksgiving because they are protecting us (especially my nephew Alex!) by serving in the armed forces. 
  • Both of our jobs. We are lucky enough to both be employed and to provide for our family.
  • Our friends who have turned into our family.
  • Our health. It has been a crazy year with all of the strep that has hit this house, but in the grand scheme of things we are lucky to have only minor illnesses. 
  • My running  buddy who pushes me every week and makes sure that I'm not slacking. 
  • Great coworkers. I seriously work with the best group of people I have ever worked with. They completely embody the word 'team' and I am grateful.
I'm sure I forgot some things, there is definitely a lot to be thankful for this year. What are you thankful for this year?

Our Thanksgiving

I truly hope your Thanksgiving was fantastic and you, like myself, ate your body weight in stuffing.

Aaron helped me in the morning with all of the prep work for the dessert (apple snickerdoodle cobbler), the stuffing and the sweet potatoes. I was afraid we weren't going to have any apples for the cobbler because for every slice I cut, Aaron was there eating another.

We also watched the Macy's Thanksgiving Parade and Jill pretended to be a Rockette the rest of the morning. I don't know what it is about that parade, but it always puts me in the spirit for the holidays.

Thanksgiving was spent at Mimi and Paw Paw's house and we had quite the spread. Aaron insisted on eating the turkey leg and after a few bites he gave up.

After dinner we headed home to relax and then read the Elf on the Shelf story. I really love this tradition and even though by night 10 I'm spent with ideas, it's totally worth it to see their reaction every  morning.



Boyd the elf's first location was their room and the reaction they had this morning was priceless. If it is any indication of how they will react on Christmas morning, it will be perfect!

Thanksgiving Thursday: Thanksgiving Edition


Every week I list the things that I am thankful for, and since today is Thanksgiving the list may be a little bit longer.

This Thanksgiving I am thankful for:
  • Scott who has been my rock this year. He has helped me transition from stay at home Mom to full-time working Mom. I am so lucky to have a husband that does as much as he does. I love you so much and am excited to see what this next year holds for us.
  • Scott who supports my running. Did you know he keeps all of my race times and tracks them every year? He's my biggest (and most handsome) cheerleader.
  • Aaron who has the best sense of humor and can always make me laugh, even when I don't need to laugh. 
  • Aaron who can give the best hugs when you need them. 
  • Aaron who genuinely loves, cares and shows concern for everyone around him. Some girl is going to be very lucky to have him one day in the very very distant future.
  • Jillian who reminds me so much of myself at this age. Sometimes this is a good thing and sometimes this is the thing that nightmares are made of. 
  • Jillian who comes up with some of the funniest observations I've ever heard. 
  • Jillian who also genuinely loves, cares and shows concern for everyone around her. I would say some boy is going to be very lucky, but he also gets her "stubborn" streak too. It will take a very strong man.
  • My parents who are always there for me when I need them. I am so lucky to have the family that I have and honestly wouldn't change it for anything. 
  • My in-laws who are an amazing support system for us. They help us in so many ways and I don't know if I can ever say thank you enough to them. 
  • My brothers and sisters who have helped shape into the person I am today. This includes all traumatic experiences that have led to phobias in my life.
  • My amazing friend Dawn. She's like my sister from another mister, I love her!
  • My friend Jenn who I can truly be myself with. Seriously, who else can you crack a bottle of wine open with and lounge in your sweats?
  • 2nd chances.
  • The success I've had at Multiples and More. It has given me so many opportunities and has just been an overall blessing. 
  • A job that I love and coworkers that I love just as much. Not many people can go right into a job they have their degree in and then immediately love it. I'm very lucky and blessed!
  • Having a roof over our heads when so many people are losing theirs. We are blessed and lucky to still be where we are.
  • Our church family. We are lucky to have found a great group of people in our parish.

Our Thanksgiving

I'm not going to lie, I did not have high hopes/expectations for our Thanksgiving this year. Scott and I were/are getting over pneumonia, Jill has an awesome barking cough, and Mimi is in the hospital with a raging staph infection that is now seemingly under control. Paw Paw and I chatted and I said I had zero desire to make the full feast and we decided to order it in from Publix. Funny story, I ended up making everything except the turkey anyway.


Scott's only requirement on Thanksgiving is cornbread dressing, and actually his Mom makes squash dressing (which is cornbread dressing but with squash), and Maw Maw's gravy (which really is more of a soup than a gravy, but I digress). So I made a regular bread dressing for us Northerner's (Paw Paw and myself) and the squash dressing for the Southerners (Scott and Mimi since Paw Paw took her a plate). It's dangerous territory being a Yankee making southern food, but apparently I was successful.


Dinner itself was a success and really delicious. The turkey was perfect and so was my apple pie. The tryptophan kicked in right away for Aaron who was already tired. It only took one slice of turkey and the poor kid was out.


At the end of the day it was a great Thanksgiving. I may have eaten my body weight in stuffing and other various carbohydrates, but it was totally worth it. Hope you had a fabulous Thanksgiving as well!

Thanksgiving Thursday - Thanksgiving Edition

Every week I list the things that I am thankful for, and since today is Thanksgiving the list may be a little bit longer.

This Thanksgiving I am thankful for:
  • Scott and everything he does for us during the year. He is the sole bread winner and I know how much pressure that is on him. I am thankful for the days he gets up and goes to work when he would rather stay home or do something else.
  • Scott allowing me to have access to the Netflix account so we can watch movies that have more than one word titles and star people other than Vin Diesel.
  • Scott having both Thanksgiving and Christmas off this year. I honestly cannot tell you the last time this happened or if it has ever happened before.
  • Aaron who has the best sense of humor and can always make me laugh, even when I don't need to laugh.
  • Aaron who can give the best hugs when you need them.
  • Aaron who genuinely loves, cares and shows concern for everyone around him. Some girl is going to be very lucky to have him one day in the very very distant future.
  • Jillian who reminds me so much of myself at this age. Sometimes this is a good thing and sometimes this is the thing that nightmares are made of.

  • My amazing friend Dawn. She's like my sister from another mister, I love her!
  • My friend Jenn who took the kiddos for the day when we were sick. She's an amazing friend in general and I love her dearly!
  • The success I've had at Multiples and More. It has given me so many opportunities and has just been an overall blessing.
  • Having a roof over our heads when so many people are losing theirs. We are blessed and lucky to still be where we are.
  • Missy teaching me how to coupon to the point that I do. It saves us so much money and ensures that we have more than enough food to the point that people can literally shop out of our pantry if need be.
  • Our church family. We are lucky to have found a great group of people in our parish.

Thanksgiving and the day after

Our Thanksgiving was really great. We ended up all going to my parents hotel room and having dinner there. Publix pretty much does the entire meal and you just have to heat it up, which really, is perfect, and I brought apple pie and kolacky for dessert.


After dinner we played Just Dance 2 on the Wii, because obviously you need to work off all the turkey and in my case, stuffing that was just eaten. This was hands down the funniest thing I've ever seen. My niece Lorren gets way into this and it makes for a good video, like this one:



Yesterday my niece Melissa and nephew Alex came into town. It was so great to see them, even it was for one day! We all met up at EPCOT and had dinner at the new restaurant, Via Napoli. I have never eaten so much pizza in my life, but it was crazy delicious. After dinner we were able to get a picture of all the grandkids (that were on the trip anyway).

Thanksgiving Thursday: The Thanksgiving Edition

For those of you that don't know what Thanksgiving Thursday is, it is the one time during the week where you stop and basically count your blessings. Even if you've had one of those weeks, I promise you can find at least one thing to be thankful for, no matter how big or small.

Today on Thanksgiving I am thankful for:
  • Scott and everything he does for us. He is my rock, my shoulder to cry on and the comedic relief that I sometimes desperately need.
  • My two beautiful children. I cannot tell you how lucky we are when it comes to the kids. Granted, there are times that I want to pull my hair out, but they really are the greatest kids.
  • My family being in town for Thanksgiving. I love getting to spend the holiday with them!
  • Mimi and Paw Paw and all that they do for us.
  • That we can celebrate Thanksgiving with a hot meal, there truly are so many people that cannot.
  • Family recipes that are passed down and the amazing feeling you get when you make something for the first time and it instantly reminds you of when you were a kid at Grandma's making the same thing.
I truly hope all of you have a blessed and happy Thanksgiving!

Way back When-esday: First Disney Trip

Dateline: Around Thanksgiving 2007
Twins Age: About 15 weeks

This was the kiddos first ever trip to Disney. I remember I barfed the following day because I didn't drink enough water the day this photo was taken. I had crazy morning sickness and something as simple as not having another glass of water could cause me to throw up until I went to the hospital. For real.

I'm really excited because this year almost everyone is coming down again for Thanksgiving. We may have to recreate this photo!

Yesterday was pretty awesome, minus the fact that Scott had to work 12 hours :( We went to Mimi and PawPaw's for the day. PawPaw's cousin Dave, his wife Sue and their daughter Beth joined us, along with my friend Jenn and her boys. The kids wanted nothing to do with the turkey, like at all. They both ate their fair share of crescent rolls and cranberry sauce though. Always delicious, just not that nutritious.



Today we had a playdate with Lani, April and all their kiddos. Talk about a full house! Six 2 year olds and two 18 month olds. Phew! We were all talking about how different the playdates are now. We actually get to sit and talk and the kids actually, dare I say it? Play! Jill was in a bossy mood today, maybe bossy isn't the word I want to use....beyotchy yes that's the word I want to use. I think she staked claim on all of the toys and if someone so much as breathed in it's direction she had a fit. Clearly sharing is not a priority with her (check minus). Poor Aaron was struggling with the fact that he had shoes on and had a heck of a time getting around. Thanks again Lani for having us all over!

Thankgiving Thursday: Turkey Day Edition!


Gobble Gobble!!! Happy Thanksgiving everyone!!! It's time for Thanksgiving Thursday, the Turkey Day edition! I am thankful for:


  • My wonderful husband Scott! It's been a pretty rough year (hasn't it been for all it seems?) and through it all he has been the rock for us and by far has sacrificed the most for us. I love you and thank you for everything you have done!
  • My kiddos! I am so thankful that they are healthy (minus the plague from a few weeks ago) happy and entertaining to say the least!
  • My parents! To say I grew up lucky is an understatement. I had the best of everything growing up and still do. I am thankful for all the sacrifices you made so we could all have the best in life!
  • Scott's parents! You guys are the best in laws I could ask for! I truly feel like a part of the family and I appreciate everything you have done for us over the years! I don't know if there are enough chocolate chips in the world to show you how thankful I am :)
  • My brothers and sisters (including brother/sister in laws)! Even though you guys picked on me all the time (actually you still do...hmmm) I am so thankful to have all 5 of you in my life, you're the best siblings a gal could ask for!
  • Great friends! I truly have some of the best friends around, you know the kind that would bail you out of jail at 3 in the morning, and the ones that would be right there with you going "God that was awesome!".
  • A great business partner! Lani also falls into the previous friend category (I will not say which part of that category), and I am so lucky to have her as a part of Multiples and More! She is by far the more creative one and is always more willing to take a risk than I am. Without her I don't know where the site would be.
  • The Wiggles, seriously! How else do you think I got all that stuff done yesterday??? ;)

Pre-Thanksgiving cooking

Today was definitely a busy day in the kitchen! And luckily the kiddos were pretty ok with it (phew!).

I started the day by making an apple pie for tomorrow. I've made this one before and it's really yummy!



Then I went to make my French silk pie for tomorrow and realized I didn't have enough eggs, awesome. So after naps and after Scott got home I made the mad dash to Sweetbay. I really didn't want to go, people are nuts-o the day before Thanksgiving (think hurricane season on crack). When I got home I started making the pie. It's really simple, and looks yummy. I got the recipe from Pillsbury.com:


INGREDIENTS
Crust
1 Pillsbury® refrigerated pie crust (from 15-oz box), softened as directed on box
Filling
3 oz Hershey's® unsweetened chocolate, cut into pieces
1 cup LAND O LAKES® Butter, softened (do not use margarine)
1 cup sugar
1/2 teaspoon vanilla
4 pasteurized eggs or 1 cup fat-free cholesterol-free egg product
Topping
1/2 cup sweetened whipped cream
Chocolate curls, if desired
DIRECTIONS
1. Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell, using 9-inch glass pie plate. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes.
2. In 1-quart saucepan, melt chocolate over low heat; cool. In small bowl with electric mixer, beat butter on medium speed until fluffy. Gradually beat in sugar until light and fluffy. Beat in cooled chocolate and vanilla until well blended.
3. Add eggs 1 at a time, beating on high speed 2 minutes after each addition; beat until mixture is smooth and fluffy. Pour into cooled baked shell. Refrigerate at least 2 hours before serving. Garnish with whipped cream and chocolate curls. Cover and refrigerate any remaining pie.

Hopefully it's as good as it looks!

While I was doing this Scott and Aaron left to go on a super secret mission and returned right before dinner with this:

It's my favorite everyday fragrance and I have been out for...well....forever really :) Thank you Scott it really made my night!

After the pies were done I got started on making cinnamon rolls for Mimi to serve on Friday morning. I got the recipe from my Williams and Sonoma Baking cookbook. I'd love to put it up but gosh that would take forever! If you want it I can scan it and email it to you.


They look good, I cannot wait to hear how they turn out!

As if I wasn't doing enough cooking I decided to make Cheddar Cheese Soup for dinner. The recipe is from Le Cellier at EPCOT. Scott and I are HUGE fans of this soup and get it every time we eat there. I was pretty nervous about making it since it is such a favorite of ours. But it turned out fantastic! Here's the recipe:



1/2 pound of bacon, cut into 1/2-inch pieces
1 medium red onion, cut into 1/4-inch pieces
3 celery ribs, cut into 1/4-inch pieces
4 tablespoons butter
1 cup all-purpose flour
3 cups chicken stock
4 cups milk
1 pound grated white cheddar cheese
1 tablespoon Tabasco sauce
1 tablespoon Worcestershire sauce
Coarse salt, freshly ground pepper to taste
1/2 cup warm beer
Chopped scallions or chives, for garnish

Preparations
1. In a 4- or 5-quart Dutch oven, cook the bacon, stirring, over medium heat for about 5 minutes, or until lightly browned.
2. Add the red onion, celery, and butter and sauté until the onion has softened, about 5 minutes.
3. Add the flour and cook, stirring constantly, for about 4 minutes over medium heat. Whisk in the chicken stock and bring to a boil for 1 minute. Reduce heat to a simmer and cook for 15 minutes, stirring occasionally.
4. Add the milk and continue to simmer for 15 minutes. Do not boil after you add the milk.
5. Remove from the heat and stir in the cheese, Tabasco sauce, Worcestershire sauce, salt, and pepper until the cheese is melted and the soup is smooth. Stir in warm beer. If the soup is too thick, thin with some warm milk.
6. Serve the soup hot, garnished with chopped scallions or chives.

I actually made a double batch because I'm crazy. I have plenty of soup for Scott to take to work for the week!

I'm totally pooped now! I think I'm going to cozy up on the couch with Scott, some Pinot Grigio and some Modern Family! Happy Thanksgiving everyone!!!!

Multiples and More Question of the Week

This week's question is:



What is your favorite thing about Halloween?

I'm going to stick with my original answer on this, it's the candy. Nothing preps you better for the gluttony that is the holiday season than Halloween. Halloween is like the appetizer course at a restaurant, it just gets you started. Thanksgiving, naturally, is the main course. After Thanksgiving you feel like you're going to explode and then BAM Christmas and all those delicious cookies and deserts. New Years is like the car ride home from the restaurant where you're cursing yourself for eating so much and that you'll never do it again. But back to the question....

I love the assortment of Halloween candy and the fact that you can buy a 5lb bag for next to nothing, I mean that's why we all have a Sam's Club/Costco/BJ's membership, right? Normally I have a Stitch candy jar filled with either Reese's Pieces or Halloween M&M's, but I didn't put it out this year, bummer.

I'm also a firm believer in the fistful of candy when you trick or treat, not the lame here's two-pieces-move-along-kid. I know when I was a kid those were the coolest houses, especially if they had Snickers, Butterfingers or any of the other really good candies. As a side note to people who give out the orange circus peanuts, keep 'em, kids don't want them, I promise.

So many things to be thankful for....









I have to say this season is by far my most favorite of all. I love the holidays! We spent yesterday with my family at Saratoga Springs. My Mom had a turkey and all the fixin's (I live in the semi-south so I can say that now) and it was just a great time. We all went over to Ghiradelli's later for ice cream, but mainly to walk off all the turkey we had just eaten. It was an awesome day and truly makes you think about how lucky and blessed you really are. I hope everyone had an amazing and blessed holiday!
