Anniversary Adventure

Scott and I have a neat tradition that we do every year for our anniversary (well, every year but one, I mean come on, Paul McCartney was in town!). We always go to a Disney restaurant to celebrate. Since we met and Disney and were married at Disney, it's really only fitting that we would celebrate at Disney.

This year we decided to spend the day at EPCOT. We made reservations at Chefs de France and played the rest of the day by ear. I have to say, the day was pretty awesome since we didn't have to worry about running two kids to the bathroom, or having them say they didn't want to go through a store.

We did make it a point to stop at the American Adventure and have someone snap a photo of us. 9 years ago this was where we held our reception. There are so many memories in that rotunda, and we are so lucky that it isn't going anywhere anytime soon.

Thank you to everyone that left anniversary well wishes on the blog and Facebook!

Staycation Vacation Part 2

Let's keep the staycation going!

The second day of our vacation started with breakfast at Boma at the Animal Kingdom Lodge. The kiddos and I have loved this buffet since we went with Tay Tay and Lorren over marathon weekend. Jillian is a huge fan of their jungle juice and I am huge fan of their breakfast potatoes. Aaron is a fan of the whole thing.

After a super filling breakfast we headed over to EPCOT. Our plan was to do the behind the seeds tour at the Land and then the Easter egg hunt through World Showcase.

We managed to score the noon tour and there was only one other family with us. The tour before us and directly behind us had several more people.

The first part of the tour our guide taught us about how they control pests in the greenhouses. The kiddos were then given a vial with lady bugs to hold on to for later in the tour. We went through the different greenhouses and learned about all of the growing techniques they use and how they keep everything growing all year round.

At the end of the tour the kiddos were able to release their lady bugs on to a plant of their choosing. If you ever have a chance, definitely stop by the desk and sign up for the tour. It's really interesting and the kids loved it.

After the tour we picked up our map for the Easter egg hunt and then headed to lunch at Nine Dragons. The kids LOVED everything they ate and I think this will become a place that we continue to frequent.

With lunch done, it was time to focus on the Easter egg hunt. We have never participated in this before and had no idea what we were even looking for. Thankfully, a cast member gave us a clue on what we had to do.

Each country around the World Showcase had an egg decorated like a character hidden somewhere outside. You had to locate the egg and then put the coordinating sticker on the location on the map they give you. I have to say, some eggs were pretty easy to find and then some...well...let's just say we looked all sorts of special walking around with our maps and heads turning every which way.

The kiddos really got into the hunt and were beyond thrilled when they found their final egg in Canada. We headed to the Ports of Call shop and they picked out their rewards. Each person that completed the hunt was able to get an egg of their own. Jillian naturally picked Tinker Bell and Aaron snagged Pluto.

With the hunt over, we headed back into the countries to hang out and go on some rides. We took the kiddos on Test Track for the first time and we may or may not have had to bribe Jillian with ice cream. They were both a little nervous, but the fact that they were able to design their own cars definitely put them at ease. Once we were on the ride there was a lot of giggling and "woo-hoo!" going on. The kids loved the ride and I think we may be going on it often.

After the ride we headed over to France for some ice cream and I had the most delicious ice cream sandwich. They take a brioche, add a scoop of ice cream and chocolate sauce. Seriously. So delicious.

The final plan of attack was to locate a spot to watch Illuminations. Scott thought we should head to Mexico and nosh on some nachos, therefore scoring us a seat on the water. Sadly, we were not the first people to think of this. So we still grabbed the nachos (and maybe a margarita) and sat outside of Mexico on the water.

It was actually pretty chilling that night, so the kiddos and I snuggled under a blanket. This was also their first time watching Illuminations, normally we leave the park before it starts to beat the crowds. I think the kids were most excited about staying up way past bedtime.

The kiddos were out before the bus pulled out of the parking lot. Our second day of staycation was a total blast and I know we were not ready for the day to end.

One more day of the staycation to go. Check back for the conclusion!

Celebrating Running with Some Fireworks

It's the last weekend before school starts. Um, didn't summer just start? Didn't we just go to graduation? I'm pretty sure we did...

Anyway...We made the most of our last weekend. Scott and I started it with the Celebration of Running 5k through downtown Orlando. It was a course neither of us had run before and it was a ton of fun. I hung with Scott the whole time and told him we were crossing together. Scott said I pushed him at the end, and I was happy to do it!

How cute are we?! And how cute are those medals?!

After the race (and after the rain let up) we all went to EPCOT to just enjoy the afternoon.

We went on a few rides, had some dinner, some dessert and settled in to watch the fireworks. We usually are not in the parks late enough for the fireworks, so it was definitely a treat for the kiddos. I'm not going to lie, Scott and I both needed coffee to make it through.

Today we all slept in well past our normal wake up times and then just hung out for the rest of the day.

I'm not even ready for tomorrow. I cannot believe my babies are going to be in first grade. Where has the time gone?!

Wishing all of you a happy first week (or maybe it's your second, or you're lucky and haven't gone back yet) of school!

Where Have We Been? Disney, of course!

To say we have been busy the last week would be an understatement. Why have we been busy? Well, for starters, these two crazy kids are here:

It's awesome having my folks in town and I've been able to take some time off to spend it with them. Last Saturday us ladies went to the afternoon tea at the Grand Floridian. None of us had been and I couldn't wait to make some memories.

The tea was wonderful! They even brought out a small tea pot for Jillian. I hope to make this a tradition for us ladies.

That night we went to Maggiano's to celebrate my new job.

Aaron decided to have family style with us and ate until he almost burst.

My parents checked in to their Disney hotel on Tuesday and my brother Kevin and his family joined them. We all met up on Thursday at EPCOT and had a beyond delicious lunch at Via Napoli.

I promise my nephew smiles, just not in photos. I guess the same could be said about my Dad. Hmmm....

The next day we started our morning at Chef Mickey's. Now, let me tell you what happened and how much my life has changed in the 6 years since I have had these kiddos. I was walking back from the buffet, plate in hand, and the child in front of me blew chunks everywhere. I sidestepped the mess and my first thought was, "Oh crap, I didn't grab any eggs..."

Aside from that display, the breakfast was awesome and the kiddos were able to see all of the characters.

We headed out to Animal Kingdom after breakfast and I was able to snag this photo on the way to the buses:

Animal Kingdom was fun...hot...but fun. We headed back before the storms hit and then headed out to dinner with my cousin Mike and his son. While we were waiting for them, my niece and nephew were hanging with Jill. My nephew was busy teaching Jill how to spit over the railing. Memories, people, memories.

The next day we all headed out to Hollywood Studios. I'm not totally sure what my most favorite part of the day was, lunch at Sci Fi, riding Tower of Terror with my Mom and niece, riding Tower of Terror with my nephew, niece and cousin or the moment we found my Dad sitting on a bench at the front of the park because, you know, we would have to walk by at some point.

The kiddos spent the night at the hotel with their grandparents and all I know is they stayed up later than Scott and I.

We all met up for breakfast this morning at Kona Cafe and then spent the day poolside. We ended it on a pontoon cruising the lakes.

The visit has been awesome and unfortunately, really fast! Now, if you'll excuse me, I need to catch up on some sleep.

Way Back When-esday

Dateline: September 12, 2011
Age: 3

How perfect that I took this photo exactly a year ago? Aaron is obsessed with Belle, like he LOVES her. We happened to find while hanging out at EPCOT and she didn't have a line, so he got to have his time with his lady love. I love this photo and how excited he and Belle are with each other.

Memorial Day Weekend

We definitely had a busy weekend! Saturday friends of ours had a pool party, one that they have every year. The last time we went to the party the kiddos were only 2 or 3 weeks old. It was their first official outing, I believe.

This year they spent almost the entire time in the pool. They had so much fun splashing around with everyone! Thanks again Kathy and Gary for hosting an amazing party!

Sunday was our anniversary so that night we went to EPCOT for dinner. Naturally, there was a tropical storm/depression on the move. Thankfully, it held off while we were outside.

We had dinner at Le Cellier in Canada. This is one of Scott's favorite restaurants on property. As always, it was super delicious.

Yesterday we just hung out at the house because it's pretty much been raining since Sunday night. I'm attempting to get Aaron potty trained before vacation, and he told me he will just stay home and wear his diapers. Fabulous.

How was your weekend?

Our Wedding in Photos

Welcome to another wedding week post! Today I'm going to talk about our actual wedding day. I'm not gonna lie, I love talking about our wedding because I thought it was fabulous. So let me walk you through our day with some of my favorite photos.

The guys took photos first over at the Grand Floridian. They actually had to hide in 1900 Park Fare so I could be brought into the hotel after taking photos in the lobby. I think my favorite out of all of them though is this shot of them walking over to the Wedding Pavilion.

While the guys were taking their photos outside we started our photos inside the hotel. I have never felt more amazing or gorgeous in any other outfit I have ever owned. The moment that dress and veil were on me I felt like a princess. I love this photo of me and the girls, we were all laughing the entire time.

After photos we all headed to the Wedding Pavilion. Scott and his guys were inside the main building while me and the girls were in the bride's vestibule. They have the music pipped into the back room so you could hear when everything was happening.

I didn't start getting nervous until only my Dad and I were left in the bride's room. It was in that moment that it finally hit me. The moment the doors opened I didn't see the gorgeous flowers that lined the aisle, I didn't see any of our guests, I only saw Scott. It wasn't until 5 minutes into the ceremony that I even noticed there were flowers in the room. This photo really showcases how beautiful the pavilion was.

I loved the music from our wedding. Our mothers walked in to "The Rose", which is one of my Mom's favorite songs. The guys walked in to "A Gift of Thistle" which is from the movie Braveheart. We couldn't think of a song for them and then one of our wedding planners played it and we loved it. The girls walked in to "Clair de Lune". I cannot fully express my love of this song and my hatred of the fact that it became popular because a sparkly vampire played it on piano (lame). As a cute little surprise we had my niece, who was the flower girl, walk in to "It's a Small World". It was so adorable! Before I walked in the bells chimed to 5 (since it was 5 pm) and then the organist started "Trumpet Voluntary". I wish I had some amazing story behind why I chose this, but truly, I'm not a fan of "Here comes the Bride", and I've always loved this song. When we lit our unity candle we played "All I Ask of You" from Phantom of the Opera. I get goose bumps just thinking of this song. We walked out to "Hornpipe" another favorite of mine. After the wedding party was out, the organist played the music from the Main Street Electrical Parade. Since Scott and I worked together on Main Street we thought this was perfect!

I also want to share our readings. It took us some time to pick out just the right readings. For our first reading we chose Ruth 1:16-17, which is hands down my favorite verse. My Godmother read this reading, and this was the only time I cried the entire ceremony.

But Ruth said, "Do not urge me to leave you or turn back from following you; for where you go, I will go, and where you lodge, I will lodge. Your people shall be my people, and your God, my God. "Where you die, I will die, and there I will be buried. Thus may the LORD do to me, and worse, if anything but death parts you and me."

Our second reading was one of the classics, 1 Corinthians 13: 1-8 13. My brother Chris did this reading.

If I speak with the tongues of men and of angels, but do not have love, I have become a noisy gong or a clanging cymbal.  If I have the gift of prophecy, and know all mysteries and all knowledge; and if I have all faith, so as to remove mountains, but do not have love, I am nothing. And if I give all my possessions to feed the poor, and if I surrender my body to be burned, but do not have love, it profits me nothing. Love is patient, love is kind and is not jealous ; love does not brag and is not arrogant,  does not act unbecomingly ; it does not seek its own, is not provoked, does not take into account a wrong suffered,  does not rejoice in unrighteousness, but rejoices with the truth ;  bears all things, believes all things, hopes all things, endures all things.  Love never fails ; but if there are gifts of prophecy, they will be done away ; if there are tongues, they will cease ; if there is knowledge, it will be done away.
And now these three remain: faith, hope and love. But the greatest of these is love.

Our third (Gospel) reading was John 15: 12-13; 16-17:

This is my commandment: Love each other in the same way I have loved you. There is no greater love than to lay down one’s life for one’s friends. You did not choose me, but I chose you and appointed you to go and bear fruit-fruit that will last. Then the Father will give you whatever you ask in my name. This is my command: Love each other.

Each reading was perfect for us and the ceremony.

Our ceremony was long by Disney standards, but I wouldn't change it at all. I loved what our minister had to say, and I want to share one part of it (I wish I could upload the video of it, but for real that's a whole lot of effort right now). When we were in our premarital counseling our minister told us about the Meeting of the Waters. It's when the Rio Negro meets the Amazon. The Rio Negro is black and the Amazon is a sandy color. At this one point the two rivers meet and mix, at that moment you cannot separate the two, they will always be connected, and you cannot tell where one meets and the other ends. We feel in love with this story and asked him to use it in his sermon.

Aside from the beauty of the story, the black and white aspect of the story is perfect for a wedding.  The bride in white and the groom in black, just like the two rivers. The best man even incorporated this story into his toast, suggesting that I was the Missouri and Scott was...well...the muddy Mississippi.

After the ceremony we took all of our "formal" photos. Scott and I really didn't want formal photos to be the focus of our wedding photos. Of all of the photos that were taken, this is hands down my favorite. I have it in a sepia tone framed in the family room.

The time between the ceremony and the reception was the best. It was a nice quiet ride with Scott to EPCOT and we were able to hang out in a room before having to see everyone. It's nice to have that moment with your new husband without having to focus on anyone else. While we were enjoying our quiet time, all of our guests were on the Isola in Italy enjoying cocktails and appetizers. Keeping the location there was a last minute decision since storm clouds were looming. I'm glad we didn't move it inside, because it was gorgeous. Well, at least I think it was, I wasn't there. I wish I had a photo to share, but alas there are none, just video.

We had our reception at The American Adventure in EPCOT. The room on its own is absolutely breathtaking and did not need a lot of enhancements. Wasn't it gorgeous?!

After introductions we had our first dance and then the best man and maid of honor did their toasts.

Harley was Scott's best man, they've known each other since Scott was a sophomore in high school.

Kristin was my maid of honor, we've been friends since her grandfather knocked on my dorm door and said I had to meet his twin granddaughters down the hall.  She also won bonus points with all of the fraternity brothers for toasting with a beer can.

Scott and I spent most of dinner visiting all of the tables, we were able to sit down as the main course was being served.  We served Caesar salad, Raspberry Sorbet, and a duo plate of filet and chicken. 'Twas delicious.

One of the first "dances" after dinner was to Piano Man. I can't really go into detail on this song and its significance, except to say it's a fraternity thing. Scott and his brothers from Chi Phi (along with us ladies who are with them) all sang and danced to it. This was my first of many Piano Man experiences.

After that I had my dance with my Dad. We danced to Tony Bennett's version of "The Way You Look Tonight".  It took me forever to decide on a song to dance with my Dad to. All of the traditional father/daughter songs sounded corny to me, and I kept hearing this song and knew. I specifically chose the Tony Bennett version because of a story my Dad told me when he and my Mom went to visit my brother at school. They were walking down the hall and Tony Bennett was walking past them, my Dad being my Dad yelled, "Ay Ton-ay!".  It was perfect.

The dancing was full on after this. Scott and his friends were line dancing and we all "danced" to our favorite 80's tunes, all while not dropping a single drink on the dance floor. I was most impressed with that.

I was kind of obsessed with our cake. It was so simple, and yet, amazing.  We had three different flavors of cake. I can't remember what the bottom and top layers were, but the middle layer was chocolate with peanut butter mousse inside. It was like eating a peanut butter cup.

We did the bouquet after the cake, and not so surprisingly the lucky lady that caught it, Bonnie, actually was married two years later. The garter toss was far more entertaining. Scott was on edge all day that my brothers were going to do something. He forgot about my Dad. When Scott went to get the garter he asked Harley to watch my brothers, well out of left field he comes my Dad. My brothers followed closely behind and Scott paid them off. Apparently the going rate for me is $60.

My nephew, Alex, caught the garter. Also, no drinks were spilled, another victory.

The next tradition was a family tradition. In most Polish and/or Croatian families, the mother of the bride removes her daughters veil and then places an apron around her waist with babies on it (it sounds messed up wearing an apron with babies on it, but it's really a sweet tradition).  My Mom did it at her wedding and I knew I wanted to do it at mine. My Mom's apron had 6 babies on it and she went on to have 6 kids. She wouldn't tell me how many babies were on mine until I saw it that night. Mine also had 6 babies. I'm not using that as a goal though. I think Scott's expression sums it up.

The rest of the night was perfect. Lots of dancing, lots of laughs, and time that went by far too quickly.

Before we knew it, our wedding planner was ushering us out of the American Adventure and over to the pier to get on Breathless.  We were trying to decide how we wanted to leave the reception and we knew we didn't just want to get into a town car and drive to the Boardwalk. Scott remembered the boat Breathless, it was Walt's boat.  Our wedding planner was just as excited as we were about leaving this way, he said he didn't know of anyone else doing it. Sold!

Trying to get in this boat though while wearing a wedding dress is a site to see. Then the driver had to push the boat from the dock and jump onto it. It was like James Bond.

We buzzed past our wedding guests a few times and then took a nice boat ride through the resort areas. The driver said he was going to make a scene before docking at the Boardwalk and even though I begged him not to, he did. He made a huge scene. If you have ever been to the Boardwalk, I'm sure you know how busy it is on a Saturday night.

We only spent a few hours in our room at the Boardwalk because we were taking photos the next morning at the Magic Kingdom.

Our whole day was amazing and people still talk about it. I cannot tell you how lucky I am to have met and married my best friend and husband at Disney. It really is the stuff dreams are made of!

Way Back When-esday: Wedding Week Edition

Dateline: May 26, 2006

Scott and I are celebrating our 6th wedding anniversary this Sunday, so today's Way Back When-esday kicks off my wedding week tribute if you will.

This photo was taken at our rehearsal dinner at the Living Seas in EPCOT.  They have a fabulous VIP room that overlooks the aquarium.

So let me tell you about our rehearsal. Scott was beyond hungover the entire day from his bachelor party. I'm talking he was throwing up as I was driving him to my parents hotel room. That's a phone call every girl wants to make by the way; "Hi Mom, yeah can you bring down your ice bucket filled with water and maybe some paper towels? Why? Oh um....well Scott missed." After a quick nap in my parents room he was ready to roll at the rehearsal. 'Twas classic.

The dinner was fabulous and the cake pictured above was to die for. We served the grooms cake at the rehearsal instead of at the wedding since we figured we'd have plenty of cake to go around at the reception.  The cake was supposed to feature the Florida State Seminole emblem, but our wedding planner, Ken, and I found out that they could make the Disney Security shield and thought that would be a fun surprise. Our wedding planner was so awesome, seriously.

Check back for more wedding memories through Monday!

Our week with Busia and Dzia Dzio

It has been a crazy week! We spent everyday with my parents while they were here and went to every park. The kids had a blast and have been sleeping wonderfully because they are so worn out.

I posted the photo collages the other day, but I'll post them again today, and this time I'll at least tell you about them.

My parent's first day here we just went to Downtown Disney, had some lunch and the kiddos rode on the train and carousel. The next day we went to Epcot and had dinner at Garden Grill inside the Land. It is so yummy there, and the kids got to meet a bunch of the characters. The next day we went to Animal Kingdom and Aaron got to be in the Lion King show. Later that day we went to Magic Kingdom and the kids went on the teacups for the first time. I went on it for my last time I think. I was definitely green after getting off. We also took the kids on Astro Orbiter for the first time, that was an experience. Friday it rained pretty much all day, so we hung out at the house and then Busia and Dzia Dzio came out and we all went to dinner with Paw Paw. I think we all needed a day to chill out. Saturday we went back to Epcot and had lunch at the Biergarten in Germany. Aaron found himself a girlfriend (the hostess), he even blew her a kiss. Something we learned at Epcot was that Aaron is obsessed with the ride Living with the Land. I've never seen a child so into a ride like that in my life. I like to think it's because it's educational, but in reality it's probably because it's a boat ride. Sunday we went back to Magic Kingdom and had lunch at Tony's Town Square. The lines were actually pretty short at Magic Kingdom, even on Sunday. Monday we went to Hollywood Studios and sat one row up at the Beauty and the Beast show. I have a feeling that's where Jill will want to sit from now on. As a matter of fact, this morning when she woke up she had a lengthy discussion with me about how the girl behind us got the red flower and she didn't and that little girl didn't even look happy when she got it, but Jill would be happy to get it. Oh my. Yesterday we just went back to Downtown for lunch and then said good-bye. Jill asked Dzia Dzio if she could go back to Chicago with him.

Here are the photos of the kiddos (mainly Aaron) with all of the characters they met:

We lucked out the one day at Epcot because they were training their character greeters, so all of the characters were out with virtually no line. Aaron loved every second of this.

We had such a great time with my parents this past week. It definitely went by entirely too fast. I know the kiddos cannot wait to see them again! Ok....the kiddos and me ;)

Finally, the Belle Post

So like I said before, today's post was originally going to be about our trip to Epcot yesterday. Now we can finally get to that post.

Yesterday the kids and I went to Epcot since the parks are pretty much empty now. The kids have been asking to go on the boat ride in Mexico for a few days now, so I figured this would be the best time to go. We were able to walk right on that, Nemo and Spaceship Earth. We also got to meet Belle. Jill was all gung ho and as you can see in the photo that changed.

Aaron on the other hand was quite taken with Belle. At first he hid behind me and then when she got down on his level he was all cheese. Belle asked what his name was and he said "I'm 3!" When I told him she asked what his name was he came back to reality and said, "Oh! I Aaron!" go ahead and insert super goober laugh and smile here.

Thank you to Belle for making Aaron's day. When we got home we watched Beauty and the Beast so we could "relive" the moment or something like that.

Canadian Cheddar Cheese Soup (aka Beer Cheese Soup)

I've been making this soup for a while now and it's one of those recipes that seems to get better and better each time I make it. I first had this soup at Le Cellier in EPCOT and have loved it since. I was so excited when I found it in the Delicious Disney Cookbook, and have since tweaked it to make it my own. This time I changed the stock and the beer that I used. Previously I was using Swanson Stock and Moosehead Beer. I swapped both of those out for Knorr's new concentrated homestyle chicken stock and Labatt Blue. I think changing these two items totally enhanced the flavors and made it hands down the best batch I've ever made. Between prepping your ingredients and cook time this recipe takes about an hour, and is so worth the wait!

Here are the ingredients that you need:

  • 1/2 pound of bacon, cut into 1/2-inch pieces *Do not cheat on the bacon, it needs to be good bacon to get the right flavoring. Also, freeze it first so it's easier to slice.
  • 1 medium red onion, cut into 1/4-inch pieces
  • 3 celery ribs, cut into 1/4-inch pieces *Tip: Peel your celery, it adds so much flavor!
  • 4 tablespoons butter
  • 1 cup all-purpose flour
  • 3 cups chicken stock *You need good stock for this recipe and hands down the Knorr concentrated chicken stock has been the best I've used, more on that later.

  • 4 cups milk
  • 1 pound grated white cheddar cheese
  • 1 tablespoon Tabasco sauce
  • 1 tablespoon Worcestershire sauce
  • Coarse salt, freshly ground pepper to taste
  • 1/2 cup warm beer *You can use any beer, but I recommend Labatt Blue
  • Chopped scallions or chives, for garnish

Preparations

In a 4- or 5-quart Dutch oven, cook the bacon, stirring, over medium heat for about 5 minutes, or until lightly browned. Do not drain the fat.

While your bacon is cooking bring 3 1/2 cups of water to a boil and then add your Knorr concentrated chicken stock. Stir until dissolved and remove from heat.

Add the butter and let melt into the bacon, then add your red onion, and celery and sauté until the onion has softened, about 5 minutes. In regards to the the size of your chop, I like mine a little more "rustic" if you will, but I've also taken my chopper to the onion and celery and had it really small which works well too.

Add the flour and cook, stirring constantly, for about 4 minutes over medium heat.

Whisk in the chicken stock and bring to a boil for 1 minute. Reduce heat to a simmer and cook for 15 minutes, stirring occasionally.

Add the milk and continue to simmer for 15 minutes. Do not boil after you add the milk.

Remove from the heat and stir in the cheese...

Then stir in Tabasco sauce, Worcestershire sauce, salt, and pepper until the cheese is melted and the soup is smooth.
Taste the soup and then re-season if necessary. I usually add a dash more of Tabasco and a pinch more of salt, but you should season to your taste.

Stir in warm beer. If the soup is too thick, thin with some warm milk.

Serve the soup hot, garnished with chopped scallions or chives (optional).

I usually let this simmer for an additional 30 minutes to really let it soak in the flavor, but I've also had it right after it was ready. This is definitely one of those soups that is even better the next day.

I know a hot soup in the summer is not something you instantly think of, but on a stormy night, it's so good. Thank you again to BlogHer for introducing me to Knorr Chicken Stock, I'm fairly certain I will not be going back to any other stock after using this.
