Way back When-esday: Father daughter time

I was going through a box of old photos and stumbled upon this one of me and my Dad. It was taken in Frontierland at Magic Kingdom. I came down with my parents and brother Chris to celebrate Thanksgiving, we even met up with my Aunt Eunice and Cousin Debbie. I'm not going to lie, that Thanksgiving was a pretty hard one for me, and it was hard to find anything to really be thankful for. I was just finishing up a pretty nasty break up and had recently started seeing Scott (which caused a rift because he was "friends" with my ex). My Dad was definitely the one person I turned to in all of this. I talked to him daily, if not multiple times a day. I still talk to him every single day, sometimes multiple times. If it wasn't for him I don't know how I would have handled that situation. Thanks Dad for everything you do!

Sing us a song you're the piano man...

After our super busy day yesterday we decided to take it easy today. I had a lot of cleaning/laundry to catch up on, so it was nice to just hang out at home. Here are some photos and a quick video from our day:



I also made some homemade corn bread tonight. My big test was to see if Scott liked it (he grew up on Jiffy in an iron skillet), and much to my surprise he (and Aaron) LOVED it! You can find the recipe on Weelicious (just click on the link).

Take me out to the ball game

It's been a busy day over here! We met up with Mimi and PawPaw for dinner at Chili's. I was really surprised there weren't more people there. But then again it was only 5 o'clock, so it was us and the ummm...early birds :) Mimi is doing much better since her procedure on Friday. Her arm hurts more from the doctor "wrenching" it than from the calcium breaking up. She was able to pick the kiddos up and everything!

After dinner we went to our friend Jenn's sons first t-ball game. Oh my gosh t-ball is insanely adorable! 99% of the kids are paying more attention to their parents in the stands or the butterfly that just flew by. It's the best! I highly recommend you catching a game in the near future. Here are some photos from the night:

Amaya Papaya

Scott was off today so we decided to take the kiddos to Amaya Papaya. The kids and I went here last month (I think?) and had a blast so I was excited to take them back. We stopped for lunch first at a pizza place in the same shopping plaza as Amaya Papaya. It was actually really yummy, which surprised me because it's New York Style (I'm from Chicago if that explains anything). The kids didn't really eat that much, there was just too much going on around them. After they ate we all headed down the way to play. The kids acted like they never left! They were right in there playing with everything as if it was theirs. We had a great time and cannot wait to go back again! Here are some photos and video from our day:

What once was lost...

....has now been found! YAHOO! I was on the phone and computer pretty much the entire day trying to track down my phone, plus I had Scott and different managers on the inside doing some work for me as well. I'm happy to say Operation Return from Space was a success! But here's the kicker, guess where it was. EXACTLY WHERE I SAID IT WAS! And it took them until 2 pm to recover the phone. I wonder how many times my phone rode Spaceship Earth? Maybe it was used as a prop and that's what took so long? I wonder if it had its photo taken and got to pick its life in the future? Hmmm.....

Anyway around 2pm Scott got a hold of someone at Guest Relations in EPCOT and my phone had just been turned in so he was able to pick it up on his way home. He's truly my knight in shining armor!

In between calls to EPCOT and central lost and found the kids kept me entertained. Sometimes I wonder why we buy toys for them, clearly boxes of wipes and diapers are all they need:


Maybe that's what we will get them for Christmas this year?

Food, Wine and a Blackberry in Outer Space

Last night I got to go to EPCOT Food and Wine with my gal pal Jenn. I was pretty excited, this is one of the events I look forward to every year. It's the one place you can try crazy food from all over and not really have to commit to a whole dish, just a sample. I forget how many booths there are throughout the park, but you could make an entire meal out of all the samples. We started our delicious journey in Greece, Athens to be exact and had a spanakopita (spinach, feta cheese in a phyllo crust). It was super yummy, slightly greasy, but really good. We also ate in Munich (apple strudel way yummy!) and Krakow (kielbasa and pierogi naturally). We mainly spent the night walking through all the shops and enjoying our time to do that without struggling with strollers and such. Jenn even got a henna tattoo:


Seriously funny though, she totally flashed the woman at least half a dozen times, I have a feeling that happens often because it didn't even faze her. After the tattoo-ing we went to American Adventure to see Big Bad Voodoo Daddy. They were insanely good, and not just because I had just had a glass of Prosecco, they were genuinely good. They have a new album coming out featuring the hits of Cab Calloway which is cool, but you know, they aren't Cab Calloway, no offense guys. They did a good job though :)

So after all the food and wine festivities we decided to go on Spaceship Earth and that's when the fun night turned to a big crap shoot. As we were getting on the ride I checked my phone and put it back in my purse, or so I thought. I had a feeling that it didn't go in my purse, but then I figured I was paranoid. So we go through the ride, get off and go to leave the park. Well it was down pouring, maybe monsooning. I went to text Scott and let him know we were going to wait it out and BAM! No phone. So we went back inside to see if they could check the ride, I mean it's only been like 5 minutes so the ride has to cycle through and they can check, right? Well you would think. The cast member I dealt with was super nice and assured me they would check. So Jenn and I sat by the exit fingers, toes and all other appendages crossed hoping that my phone would show up. No dice. I watched the last family walk off the ride and then all the cast members followed, ummmmm what about my phone that is probably sitting at the top of the ride blinking away because Jenn has been calling it the last fifteen minutes (I hope you like Jason Mraz "I'm Yours" because that's what you've been listening to). So I talk to the coordinator, who we will call Jerk Face #1, and he just brushed me off and told me all lost and found was taken to Guest Relations. Funny, I didn't see anyone walk by with lost and found, but ok. So I dashed across, in the monsoon, to Guest Relations to see if they had my phone. I get in there, see the open cast member and make my way to him then, Jerk Face #2 as we will refer to him, says "Oh no ma'am that lady was ahead of you". What lady?! And there she was all the way at THE BACK OF THE ROOM. So this lady wanted every single button that Disney makes times like a million. So here I am waiting while this guy takes his sweet time to get her all those buttons that, "You know I'm not supposed to give all these out". Then don't, or do it faster Jerk Face #2. So he's finally done with her and I get up there and ask about my phone, he goes to the back to "check" and is back within like 2.3 seconds with no phone. Really, you checked? Ok.... So he doesn't have it and gives me the number to central lost and found. Now, I worked at Disney for a few years and I know that stuff rarely actually makes it to central lost and found, it's usually swiped before it gets there (sorry to ruin the magic for you). I called Scott and told him what happened and he told me to ask for security so I could file a report and have it all documented. Good call Scott! So I go back in and there's Jerk Face #2 again. "Oh welcome back" yeah I'm excited to be here. I ask for security so I can file a report and he freaks out. "You don't need security, just fill out this yellow card, no need for security". Ummm, I want security. Still freaking out on me, so I tell him "My husband is in security and told me to ask for security". Now the kid is shaking (maybe it's the fact that I am almost 6 feet, or the fact that I knew what I was talking about). Security happens to walk in at this point, with a Blackberry. HALLELUJAH! Yeah, not mine, bummer. So security walks out while I check the phone to see if it's mine, and I look at Jerk Face #2 and go "Uh security?" and he says, and I wish I was kidding, "Oh, did you still want them?" "Is this my phone?" "No." "Well then yes, I would still like security" "But you really don't need...." "You know what, we're good, I'm done dealing with you, but thanks". So I call Scott back and he has the security manager meet me so I can file a report. Now I'm just waiting on my phone to magically show up. I also know the manager at Spaceship Earth so last night he sent an email to the engineering team to be on the look out for it. I hope someone finds it, I feel like I'm missing a major appendage or something. It's really sad. As a total side note, I have written this entire post while on the phone with central lost and found, awesome.

Quick updates

Yesterday was a pretty relaxed day over here. Mimi had a procedure done on her shoulder in the morning, so we kind of just sat around the house waiting to hear how she was doing (she's fine, everything went well!).

I made the kiddos pigs in a blanket yesterday morning and they loved them! Aaron actually preferred the sausage and ended up eating 3-4 links by himself. I'm glad I made extra! Jill ate enough to get her banana. She's not a huge breakfast eater, but neither am I.

The kids spent most of the afternoon coloring. Jill can honestly sit and color for hours, which is fantastic because she rarely sits still. Aaron surprisingly colored for a little bit as well and didn't try to eat the crayon (yahoo!). We only have a little bit of purple and blue crayon marks on the floor, so that is a success in my book!




They are also starting to sign a lot more. Some of the signs they do surprise me because I've only done them a few times, I was amazed they actually remembered them. Jill can now sign: car, flower, dog (still her favorite), more, ball, eat, thank you, bird, bear, baby and finished. Aaron can sign: dog, more, ball, eat, thank you, baby, finished, flower and car. We're still working on actually saying all these words. Sometimes I get hyper sensitive about it and freak out that they won't be able to talk, but they are saying a few things so I guess I shouldn't worry, right? Jill says: Mama, Dadda, dog, who's that? what's that? all done, thank you (almost), bye and uh ohhhhhhhh (just like that). It kind of amazes me that she can say four two-word combination's but I can't get her to say "hello". Sigh. Aaron says: Mama, Dadda, dog, ball, done, who's that?. That's all I can make out on him. Aaron tends to do things at his own pace. I shouldn't be worried, right?

Couple new recipes

I was on a cooking kick today, which tends to happen when I go grocery shopping. I made the kiddos avocado and cheese quesadilla's for lunch. They looked and tasted super yummy, but the kiddos didn't want anything to do with them. They were super simple to make, all you need is tortilla's (I use whole wheat), cheese (I used taco blend) and avocado. I put it all together on my panini press and viola!

Then after dinner I made pumpkin-pear muffins. Doesn't sound appealing, but they are insanely delicious! I've been eating them all night, I will probably end up with muffin tops of my own :( I got the recipe from Weelicious.com (if you click on the site it'll take you right to the recipe) and instead of doing them in miniature loaves I did muffins. Here's what they looked like when they came out of the oven:

This week I am thankful for:

  • Scott having a job. You tend to forget how hard some people have it and that they cannot find any work. We are so lucky to have Disney, literally, in our backyard and that they are always hiring.
  • Scott in general. I'm a pretty lucky gal and got myself quite the catch :)
  • Jill's Joey Lawrence impression, makes me laugh everytime!
  • Aaron's kisses and the noise he makes when he wants a kiss (he smacks his lips together).

No! That's the goats home, not yours!

I have been wanting to take the kiddos to Rafiki's Planet Watch in the back of Animal Kingdom for a while now. Actually, ever since the cast member told Lani and I that we couldn't go back there because of our strollers. Scott was off today so we figured we would go check it out. Yesterday the weather was seemingly nice so we figured today would be just as nice, wrong. Oh my gosh it was INSANE hot. I really thought I was in Africa on safari! We got the kiddos on the train to head to the conservation station, but if you ask Scott it's not really a train it's a bus. Total side note on this, Scott used to drive the steam trains at Magic Kingdom way back in the day. The steam trains at Magic Kingdom are totally authentic and are actually powered by steam, hence the name. And as another totally side note Scott was definitely a hottie in the engineer costume (I'm going based on photos since he was my manager when I met him and not an engineer).

Coming back to the actual story, the train at Animal Kingdom is an electric train, not a steam engine, so therefore in Scott's mind not a train. Either way the kiddos loved it. It's really a neat ride if you ever get a chance, you get to see where the animals are housed at the end of the night. I got to see this a lot when I worked at Animal Kingdom, it truly is an awesome sight, especially if the animals are in their houses. The area back there is really neat, they have more animals in that area and a ton of staff to explain everything to you. When you get to the way back they have conservation station which shows you some more behind the scenes stuff (like the vet area and what they feed the animals) and today was elephant appreciation day. They had a member of animal programs that works specifically with the elephants there and she was talking about how they feed and take care of them. They also had a board that showed all the elephants they have and their names and birthdays. I actually worked at the park when Nadhira was born and got to see her before she was brought onto the safari. It was one of the sweetest things I had ever seen. When they are that little they tend to stand underneath their Mama and both of them rock to the baby elephants heartbeat. Adorable, right?


On the other side of conservation station they have the "affection section" otherwise known as a petting zoo. They have llamas, donkeys, cows, and goats. All the animals are in their own habitats so they aren't walking around with you, which I love. I'm not exactly one with wild animals, or any animal that is not a dog. Aaron wanted nothing to do with the animals, he preferred to stand by the industrial size fans with his daddy. Jill, or shall we call her Jilly Irwin, wanted to be in the actual habitat with the animals. Dear Disney, those little ropes have nothing on Jilly Irwin. At one point she tried to put her hand in the goats mouth. Fantastic. Needless to say we were not in there that long for fear of losing an appendage or two. All in all it was a great day at Animal Kingdom. Hope you had a great day too!

We took the kiddos to the park this afternoon. We started out at a new park which I was not a fan of. How do you have a park with no shade? Seriously?! So after a few minutes we went to our favorite park and let the kiddos run all over the place and then we took them down to the lake to see if there were any boats. Beatle Mania?


Scott was home early today so we went with Mimi and PawPaw to EPCOT. We took the kiddos on Nemo, which they LOVE. After that we walked around to look at the fish and the manatees came right up to them. Jill about pooped her Pampers when the manatee swam in front of her. Aaron had a similar experience with the dolphin. I love taking them into The Seas. We could probably spend our whole day in there, that's how much they love it. Then we took them to Journey into Imagination. Aaron dug his finger into PawPaw's hand and Jill about climbed on top of my head during the one part. After dinner we went to check out The British Invasion which is a Beatle's cover band and we saw this:



The second I saw these ladies, and gentleman, get out there to dance I could wave Scott over fast enough to take the video! 'Twas priceless, I sincerely hope that when I am that age I do that as well and that my childrens' faces turn beet red. Fingers crossed!

What are the top 5 things you never thought you would hear yourself say?

This question makes me chuckle because I immediately think of things that make me sound like my Mom. And what's the best is if I had just talked to her on the phone and my accent comes back, Scott says I literally sound just like her. So my top 5 has to be:

  • Your face will freeze like that
  • Can you believe the price of beef? I mean seriously are we running out of cows?
  • Cut it out right now! (but with a finger pointing at them and in a very heavy Chicago accent)
  • Where did that come from? (You know what I'm talking about! The mystery items that wind up in the cart or stroller when you are in the store)
  • Give me that bug right now!

The evolution of the conversation

Last night a few of us MoM's went to a sushi place for dinner. I love girls nights, I always have, but more so now. I have to say though the conversations have changed over the years. In college we would talk about that cute guy in our class, or what bars we were going to over the weekend (based on ladies get in free and drink specials of course). Once I moved down to Florida and married Scott the conversations changed to stuff about the house, work and when we planned on having kids. Now that I have children the conversations are about strollers, what we found on Craigslist and the secret inner workings of the MoM's club (maybe this is really a sorority?).

After dinner we walked out to our cars and oohed and aahed over one of the MoM's newest find on Craigslist, an awesome barely used stroller. You would have thought we were oogling over a brand new pair of satin and lace Christian Louboutin's (as seen on pg. 174 of the new issue of Elle they are GORGEOUS!). It was at that moment a couple walked by, the girl in her super skinny jeans blissfully unaware that in at least 5 years time this would be her. The skinny jeans would be traded for the ones that suck in your tummy, her trendy top would be traded for one that is not covered in food, spit up, drool or some combination of the three, and her sky high heels would most definitely be replaced by flip flops since those really are the only shoes that fit since her feet will go up at least a size during her pregnancy. Poor girl has no idea what is going to hit her. BAHAHAHAHA!

I wouldn't trade the change in conversation for anything in the world. Sometimes I wish I still had the body I had in college and the balls to the wall attitude from right after I got married, but I wouldn't trade what I have right now for anything else in the world, even those satin and lace shoes!

Thanksgiving Thursday!




I truly think this has been the longest week of my life. Regardless, here is my Thanksgiving Thursday list. This week I am thankful for:

  • The beautiful flowers Scott brought me today because it's been such a long week! Kind of makes me feel like we're dating again (which by the way is the best marital advice we've ever gotten, you need to still date your spouse).
  • My kiddos, even though they've been holy terrors perfect angels.
  • Clear packing tape, it has so many uses, it's like the new duct tape! It keeps cords down and out of little hands and it also keeps cabinets full of envelopes closed so they don't magically appear all over the house.
  • Great friends, I'm lucky enough to get two Mom's nights out this week. Granted one was a board meeting, but it was pretty hilarious (more so after the fact).
  • Everyone who donated to the Church building fund! Last I heard we are only $3600 away from reaching our goal of $10,000. Hopefully we will be in our new building by Easter and out of that greasy old restaurant!
  • Amazon Prime. I love the fact that I get free 2 day shipping and only $3 overnight. Woo hoo!
  • The bag boy at Sweetbay making me feel like I was Iron woman. Poor kid could barely lift the bag into the cart and I grabbed it one handed. Lifting Aaron is really starting to pay off.
  • Our awesome family that is well, awesome :)
  • Food and Wine Festival starting soon! I love this time of year at Disney. I'm a foodie/wino and love to be able to try a ton of different things without having to commit to one dish. Had it not been for Food and Wine I would never have tried venison (sorry Bambi, you're delicious).
  • Tomorrow being Friday, it doesn't get much better than that!

Today is my brother and sister in laws anniversary! They were married three years ago in the town square of Woodstock, Illinois. This was one of the first times in a long time that my entire family was together. The photo is of all the brothers and sisters with their families, the only ones missing are my brother Kevin and his family (he was there just not in the photo) and my niece Lorren because she had a guard competition.

What is in your hand?

I'm not a bug person, not even a little bit. I don't think spider webs are beautiful, I would never put an ant farm in my house, and don't even get me started on that giant grasshopper that has made a home for itself on the wall leading up to my house. So today I was in the kids bathroom picking up the all the dirty towels and when I lifted the one I had on the floor, this came crawling out:In true girl fashion I screamed, kicked the rug and slammed the door. Somehow in this process I forgot that there is an opening underneath the door that would allow the millipede to escape the bathroom. I tried to forget about the creepy crawly and go about the rest of my morning. The kids were playing really nice (a welcome change from yesterday) and I was getting a ton of stuff done. The kids were playing in the hallway and I didn't think anything of it until they came around the corner and I noticed Aaron had something in his hand, what the? I was trying to figure out what he picked up and then it moved. Then he tried to put it to his mouth to eat it. I probably gave the poor kid a heart attack because I started screaming and yelling for him to drop it. I finally knocked it out of his hand but it started to crawl up his PJ pants (still gives me the heebie jeebies). I finally killed it with Scott's flip flop (ssshhh I didn't tell him I used his and not mine) and tossed it. It took a good 15 minutes for Aaron and I to fully calm down for the "episode". It also took 15 minutes for me to believe that I had thoroughly washed Aaron's hands and face. It took another hour at least for me to stop having the internal debate on whether he had put it in his mouth when he was in the hallway and if I should scrub his teeth, tongue and cheeks (which I did anyway because I am paranoid). Hopefully nothing will crawl out at us tomorrow and we can have a nice relaxing day :)

Is the padding on all four walls?

Ever have one of those days where you feel like it will most definitely be the one that makes you end up hugging yourself for the rest of your life in a padded room? Yeah I had one of those yesterday. Aaron was up at 6 am screaming, so I brought him in with me to get that last hour of sleep, well he slept and I just laid there trying to figure out how I could wipe the drool that was sliding down my arm without waking him up. That's when the day started to accelerate downhill, everything else was just icing on the crap cake. Everything was the end of the world to both of them. Jill changed the channel to CNN International, Aaron screamed (yeah she likes that channel by the way we watch it at least 2 times a day), Aaron played with the ball, Jill screamed. And so on and so forth until they went to bed for the night. This morning didn't get off to a great start, but right now it's quiet and they are playing quite nicely so I'll take it! Scott's BBQ Sauce

A while back I posted about Scott making his own BBQ sauce for ribs that he made, and I totally promised to post it, whoops! He made them again last night so it made me remember that I had to post this, so here it is:

What you need:
3 minced garlic cloves
2 tablespoons of butter, melted
1 1/2 cups water
1 cup ketchup
3/4 cup chili sauce
1/4 cup brown sugar, firmly packed
1 tablespoon celery seed
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
2 tablespoons prepared mustard (he used Dijon)
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon liquid smoke
1/4 teaspoon hot sauce
*if you like your sauce a little sweeter add 2 teaspoon of honey

All you have to do is cook the garlic in the butter until tender (over medium heat in a saucepan) and then add all the rest of the ingredients. Bring it to a boil and pour/baste over your ribs.

Animal Kingdom

It's been a busy few days over here! I was finally able to get my hair cut and colored yesterday, so goodbye 3 inches of of roots! I knew it was bad when after my hair was blow dried the guy doing my hair went, "Oh thank God no more regrowth!" Yeah, it was that bad. After all my running around for the day we met up with our friend Jenn and hung out for the night. It is so great having her in town!

Today we met up with my brother and sister in law at Animal Kingdom. It was crazy raining when we got there so we literally spent the first 20 minutes in the car waiting for the rain to stop. Finally the rain stopped so we could meet up with them finally! We took the kids on Triceratops Spin for the first time. They LOVED it! Here are some photos and video from the day:

From my Dad I hope my kids get the natural gut instinct that he has when he meets people, he's rarely wrong.

Where were you when the world stopped turning?


It is so hard to believe that it has been 8 years since the attacks on the World Trade Center, Pentagon and the fields of Pennsylvania. I will never ever forget that day as long as I live. I was in my Foundations of Inquiry class in the basement of Milner Library at Illinois State and had no idea what was going on, I didn't find out until my math class the next hour. It was pure chaos, at that point only one of the towers had been hit. I went to my political science class next (I have no idea why I didn't just go back to the dorms) and my professor was keeping us posted on everything and teaching us everything we needed to know about Bin Laden (remember he did this not Saddam) and the Taliban, during this time the second tower was hit. I didn't go to anymore classes that day and just sat in front of the TV watching CNN with my roomate. Then rumors started that the next attack would be on the Sears Tower and I freaked out. My sister's office was relatively close to the Sears Tower so I was freaked out about her. Thankfully nothing happened in Chicago, but the same couldn't be said for DC and Pennsylvania. I remember a day later standing on the quad with almost the entire student body to pray and reflect on the situation. It was amazing how united we all were at that time, it didn't matter who you were, what color, religion, sexual preference anything, we were all Americans and we stood united. Today needs to be a reminder of that, our enemy is not the person across from us it is the sick people that did this to us. We need to stay united and remember all of those that lost their lives, and continue to lose their lives for us. Never forget today.

Thanksgiving Thursday

  • Target shopping sprees with Mimi!
  • Jillian Michaels 30 day shred, I just got it today and cannot wait to try it! I've heard so many good things!
  • Scott getting the shift that we wanted! Always good to have someone on the inside, right?
  • Being able to get my hair done, FINALLY this weekend!
  • The awesome support that we have around us!
  • The huge success of the blog party and for all the sponsors and fellow MoM's and Dad's that participated!
  • My brother and sister making it into town safely!
  • Reconnecting with long lost family. It's so great to learn about everyone that I didn't know about!
