It'll be fun they said...

I fully blame my mother for my addiction to Candy Crush. No, I really do. I knew nothing about this game until we went to Chicago and I saw her playing it on Facebook. It looked so easy, so simple, almost fun.

There is nothing "relaxing" or "enjoyable" about this sadistic game. Like when you are on a level where you have to collect cherries and onions (what is with that?) and they don't seem to drop until you have 2 moves left. Awesome. Or when you have to break through, what like a million jellies, in 25 moves. Yup, totally relaxing...Oh, and let's not forget those tickets to even move on to another land. Ridiculous, I feel like a druggie trying to get a fix asking all of my friends on Facebook for a life or ticket or magical whatever.

Oh, can I also mention that Leann and I spent at least a good half hour talking about this game and the different levels of sheer ridiculousness that it warranted a peanut butter to calm it down. Yeah, relaxing and fun...please.

So, thanks Mom. Now, if you'll excuse me I have to try and move past level 39.

Nickelodeon Favorites: Once Upon a Rhyme - Review

Another great Nickelodeon DVD recently arrived at my house. This time it was Nickelodeon Favorites: Once Upon a Rhyme.  A few of the kiddos favorite shows happen to be on this DVD, including Bubble Guppies, Team Umizoomi and The Fresh Beat Band.


Nickelodeon Favorites: Once Upon A Rhyme Synopses:

Bubble Guppies – Who’s Gonna Play the Big Bad Wolf
The play’s the thing when the Bubble Guppies go to see a production of “The Three Little Pigs.”  But when one of the actors can’t perform, it’s up to Deema to put on the costume and take the stage.

Team Umizoomi – Umi City Treasure Hunt
Milli, Geo and Bot are going on a pirate’s treasure hunt! The Team takes Umi Pirate Ship and follows the treasure map to fun locations, searching for three special keys to open the great math treasure of Umi City!

The Fresh Beat Band – Royal Wedding
The Fresh Beats are excited for a royal wedding happening in town. But when the Princess becomes smitten with Twist because he makes her laugh, the Fresh Beats have to find a way to reunite the Princess with her Prince!

Dora the Explorer – Dora Saves The Three Little Piggies 
Vámonos! Come on and help Dora as she returns to Fairytale Land to save the Three Little Piggies, helps Boots and Tico on their first day at school, visits Magic Land and the ancient Mayans, and celebrates her birthday in a double-length adventure! 

The Wonder Pets! – Save the Cow Who Jumped Over the Moon
Ming-Ming visits her Aunt Eleanora at the local petting zoo during a school holiday.  The Wonder Pets get a call from a pop-up book where the Young Cow is having trouble jumping over the moon. 

The Wonder Pets!  – Save the Unicorn
The Wonder Pets take a mythical journey into a storybook to save a Baby Unicorn whose horn is stuck in a magical tree trunk.   

Blue’s Clues – Little Red Riding Blue
Blue, Sprinkles, and Joe act out their own version of Little Red Riding Hood. Blue is Little Red Riding Hood, Sprinkles is Little Red's brother, Goldie is Little Red's mom, Roary is the grandma, Joe is the wolf, and the rest of the characters are the audience. Blue and Sprinkles are trying to bring Grandma, who is sick with a cold, some banana bread. They are met by a wolf who wants a piece of bread but is told to get Grandma's permission first.  


Their favorite episodes are Bubble Guppies and The Fresh Beat Band. All of the episodes are adorable and are perfect for spring showers and sick days.

Team Umizoomi: Animal Heroes - Review

My kiddos love Team Umizoomi and it's a show that we recently rediscovered. So you can imagine how excited I was when their new DVD, Animal Heroes, arrived on my doorstep. 


Join Milli, Geo and Bot on four fantastic animal missions in Team Umizoomi: Animal Heroes. Help Team Umizoomi get Purple Monkey to his new Monkey Jungle home at the zoo, rescue Buster the dog at a construction site, fix the Cuckoo Bears’ clock and find all of Farmer Dan’s missing animals! Preschoolers will learn many math skills, including counting, patterns, measurement and more!

I'm a huge fan of Team Umizoomi because it encourages my kids to do mathematical problems in a fun way.

Weekends in the Sweet Florida Sunshine

We spent the majority of our weekend in the warm Florida sunshine. With all of the rain we had last weekend and all of the rain that is expected for the week, I just couldn't keep us indoors. 

Scott and our neighbor started working on replacing our fence. What a project this is going to be. Based on what I've seen so far though, I must say, it's going to be freakin' amazing when it's done.


With the guys in the back, we hung out in the front with our bikes, scooters and my favorite, chalk.


The guys did a little work on the fence today too, I think both of them were in a lot of pain though today. They took down 3/4 of the fence yesterday and put in a few of the posts. Today they did some of the paneling, so I know they're hurting.

Thanksgiving Thursday


For those of you that don't know what Thanksgiving Thursday is, it is the one time during the week where you stop and basically count your blessings. Even if you've had one of those weeks, I promise you can find at least one thing to be thankful for, no matter how big or small.

This week I am thankful for:

  • Scott who made my birthday extra special.
  • Aaron who is my snuggle buddy and is amazing me with his Spanish.
  • Jillian who is my new shopping buddy. Loving our girly time together!
  • My family who always make me feel special.
  • My sister who made my "allergies" flair up in the office. I'm so thankful we are as close as we are even though I'm in a different state.
  • 238E who made my birthday a cupcake spectacular. I definitely felt the love on Tuesday!
  • Finally finding a Jay-Z for our Beyoncé!
  • Dannon Oikos banana cream yogurt. Seriously, it's delicious.
  • 30 awesome years!

The Big 3-0

Taking a cue from one of my favorite sites (Suri's Burn Book, naturally), here is a retrospective on my year, on my 30th birthday:


  • I went on a cruise with a huge chunk of my family. I do not think it was a coincidence that a tropical storm formed upon our return. 
  • I learned to spot an ear and/or sinus infection before a doctor could. I am that good
  • I unsuccessfully judged Olympic gymnastics from my couch. Seriously, I love when you're watching these 70lb girls tumble all over the place and you're like "Wow, that was pretty good" and then the commentator chimes in with "Oh, that's going to cost her some points. Not her best performance". 
  • Earned cool Mom status by taking my kids to see Sharky and Bones from Jake and the Never Land Pirates. 
  • I survived my kiddos going to preschool with minimal tears.
  • I went back to work and was able to communicate in complete sentences.
  • I ran more 5ks in my 29th year of life than all 29 years combined. 
  • I completed my 3rd half marathon...barely.
  • I began an unhealthy relationship with food truck cupcakes. 
  • I ran in a Santa suit because a friend asked me to. That's big people.
  • I was with my Mom as she crossed off something on her bucket list: hearing Gary Sinise at Candlelight.
  • I survived the flu and strep epidemic of 2013.
  • I said goodbye to my Grandma
  • I ran a conference and was complimented by someone from the U.N.
  • I witnessed my second Papal conclave.
  • I learned more from my two 4 year olds than from anyone else in the world.
  • Scott didn't run away screaming.
There you have it in a nutshell. Goodbye 29...hello 30!

DisneyNature's Wings of Life

In time for Earth Day, DisneyNature unveiled its latest film, "Wings of Life". “Wings of Life,” is a spectacular, closer-than-close, high-definition look at the intricate world of butterflies, hummingbirds, bees and bats and their life-sustaining collaboration with flowers. Directed by Louie Schwartzberg and narrated by Academy Award® winner Meryl Streep "Wings of Nature" is a must see!

We started to watch the movie with the kiddos and then they lost interest. I think 4 is definitely a little young for this film, however for us adults, it was absolutely breathtaking.

Meryl Streep was the perfect narrator for this film, her voice truly is amazing and matches the beauty of the animals.  Plus, she's Meryl Streep.

There are so many great moments in the film, whether you are watching mother bats feed on fruit with their babies attached, or seeing a location that is covered in butterflies as far as the eye can see, you are sure to be captivated from start to finish.

To coincide with the release of "Wings of Life" and to celebrate Earth Day, Spoonful.com has 10 kid-friendly activities that you and your children can do.

I may try to watch the film again with the kids and attempt these crafts with them. I wonder if doing the crafts while watching them on the screen will help them learn more?

Disney also has a bunch of printable activities for you to use for the film and to help celebrate Earth Day.

All in all, I love this film, as I have the past few DisneyNature films. I am always impressed with the detail in these films and "Wings of Life" took it one step further.

Chicken, Broccoli and Asparagus Stir Fry

I love Asian and Asian-inspired food, what I don't love is getting take out that is full of sodium and just not so yummy stuff. I've taken to making my own Asian-style food and this is one of the newer recipes I've tried.



Here's what you need:

2 tbsp sesame oil, divided
3 cloves of garlic, minced
1 lb asparagus, trimmed and cut into 1 inch pieces
2 cups of small broccoli florets
1/2 cup reduced-sodium chicken or vegetable broth
1 lb boneless, skinless chicken breasts, cut into small strips or cubes (I used chicken tenderloins)
1/4 tsp fine sea salt
1/8 tsp cayenne pepper
1/2 cup chopped green onions (I omitted this, not a huge fan)
1/4 cup hoisin sauce

What to do:

In a large skillet, or wok, heat half the oil over medium-high heat.
Add garlic and cook, stirring for about 30 seconds.
Add asparagus, broccoli and half of the chicken/veggie broth. Cover and cook for about 3 minutes or until the veggies are tender-crisp.
Transfer the veggie mixture to a bowl.
In the same skillet, heat the remaining oil over medium-high heat.
Sprinkle chicken with salt and cayenne pepper and place in skillet. If you are using the green onions, add them here too.
Cook, stirring, for 3-4 minutes or until chicken is no longer pink inside.
Return the veggie mixture to the skillet and add remaining broth and hoisin sauce.
Cook, stirring, for 1 minute.

I served this over brown rice and it was delicious! Aaron had two helpings of it and ate all of the veggies. I hope you enjoy this as much as we did!

Thanksgiving Thursday


For those of you that don't know what Thanksgiving Thursday is, it is the one time during the week where you stop and basically count your blessings. Even if you've had one of those weeks, I promise you can find at least one thing to be thankful for, no matter how big or small.

This week I am thankful for:

  • Scott who has been with me for 8 1/2 years.  I am thankful for that every single day.
  • Aaron who knows just when to give his Mommy a cuddle, especially when she is not feeling well.
  • Jillian who now "reads" me stories at bedtime. 
  • Family who is always there when we need them.
  • Antibiotics that clear up the double ear and sinus infections that I am rocking right now.
  • Laughs in 238E that get other people in the office laughing too. 
  • Everything that I have. I was reminded the other day just how truly blessed I am. Sometimes it takes a total stranger to remind you of something so obvious.

Savory Bites by Hollis Wilder

I am obsessed with cupcakes and all things in cupcake form. One of my favorite cupcakeries (yes, I made that up) is Sweet By Holly. If you watch the Food Network, you are probably familiar with the owner, Hollis Wilder, she was the first three-time winner of Cupcake Wars.

Hollis has recently released a cookbook entitled, Savory Bites, which is packed with recipes you can make in your trusty cupcake pan. Hollis takes the traditional sweet cupcake in a new direction, with fresh flavors and a new savory look. The trusty cupcake pan works just as well for satisfying mini meals as it does for decadent sweets. Small, uniform portions make it easier to avoid overeating, and the meals are perfect for making ahead of time and freezing for the week in single or family-size portions. Hollis provides tips for having children help with the cooking to make a more enjoyable family mealtime. With 100 exciting recipes for breakfast, lunch, and dinner, such as Apple-Sausage Breakfast Cakes, Fig and Blue Cheese Tarts, Pumpkin Risotto, and Curried Chicken with Mango, Savory Bites proves a cupcake pan isn’t just for sweets and is sure to please any palate or budget.

I am all about easy, inexpensive and tasty meals for my family. Plus, making anything in a cupcake pan greatly increases the chances of my kiddos eating it with minimal complaints.

I was able to check out some of the yummy recipes from Savory Bites and here is hands down, my favorite recipe.

Westphalian Ham & Gruyere Grilled Cheese
Oven: 350°F (175°C)  Prep time: 15 minutes Baking time: 20 to 25 minutes  Yield: 12 sandwiches

Nonstick cooking spray, for the pan
18 slices thin white bread, such as Pepperidge Farm’s Very Thin White Bread
8 ounces (225 g) thinly sliced deli ham
12 ounces (340 g) thinly sliced Swiss or Gruyère

This is a delightful way to reinvent a childhood favorite! These adult grilled cheeses are chic little sandwiches with several thin layers of pure delicious flavors. Play with the cheese and meat combinations to create flavors that will excite your guests. Try tuna salad with a slice of pepper Jack, turkey and smoked Gouda with a side of applesauce for dipping, or roast beef and cheddar with a red pepper relish. The variations are endless! You can use any extra bread scraps to make bread crumbs, and the ham and cheese scraps would work perfectly in an omelet. Try using the tomato jam from page 105, the apple ketchup from page 48, or the apple compote from page 108 in one of these sandwiches. Delicious!

Preheat the oven to 350°F (175°C). Spray a 12-well classic cupcake pan with nonstick cooking spray.

Using a 2-in (5-cm) round biscuit cutter or cookie cutter of any shape, cut out 36 pieces of bread. Do the same with the ham and cheese.

To assemble, place a piece of bread into each well. Next place one slice of ham, one slice of cheese, and another slice of bread. Repeat twice more, ending with cheese on top.

Bake for 20 to 25 minutes, until the cheese is melted and the bread is toasted. Loosen the sides of each sandwich with a table knife and pop them out of the pan. Serve with a dollop of your favorite mustard, or dip in tomato soup!

United We Run

I had planned to post a "what I see on my run" story yesterday. My friend Amanda recently did a similar post and I thought it was fantastic and told her I would follow suit. Then yesterday happened...

I couldn't bring myself to hit the publish button, so it sat there and I sat here, sad, mad and devastated. There is something so sacred about the finish line and to know that someone took that from all of those people and caused such harm to the people that support them is incomprehensible. Knowing that one of them was an 8-year-old boy that just ran back from meeting his father at the finish line hit all too close to home for me. I just ran the princess half in February and my whole family, my life, was on the fence at the finish line, just like all of those people. 

But then something amazing happened yesterday, people, humanity, acts of heroism. Runners crossed the finish line and ran on to the hospital to give blood. People ran back to move barricades to let EMS and rescue personal get to the injured. People just helped others. I tried to explain it to my Dad that it's the runners way. Something I have noticed since I started running is that people who run are just  genuinely nice people. When Michelle and I run on the weekends everyone we pass says, "good morning" or "have a good run."  It's just a part of our culture. We look forward to seeing each other succeed and cross the finish line, even if it's just the crack on the sidewalk when we return to our cars.

There really is nothing to add to that. While I still cannot bring myself to hit publish, I do know it will not stop me from running or make me fearful of my next race. If anything, this brings us closer and makes us stronger. Now we run for those who had it taken from them by one (or more) coward. I will think of you when I hit my favorite spot on my run:


I will think of you when the only sound is my feet hitting the ground. 

I will think of you when I wear my favorite race shirt, the one I wore when I crossed the finish line of my first half marathon.



I will think of you at the finish line.

From now on I don't just run for me...I run for and with you, too.

Spring Monogram Wreath

I think Scott cringes when I walk into Michaels, especially when I'm by myself. It's like being in a casino, I lose all concept of time, money and good judgement. I feel like I am Martha Stewart walking up and down the aisles saying things like, "Oh look at this thing on clearance, I could make an entire bookshelf out of it" or something like that...

Anyway, I was in Michaels to buy cardstock for the kiddos birthday invitations and found myself in the floral area. How does this even happen? I don't know, this is why I need to be supervised. I purchased a natural grape vine wreath, a bunch of hydrangeas, floral wire, wire butterflies, a white letter 'N', Martha Stewart pearl paint, a sponge brush and ribbon. All of this, in my mind, was going to make an adorable spring wreath. 



The first thing I did was paint my wood letter with the paint. I'll tell you what, Martha Stewart has every paint color in the universe. The blue matched perfectly, it was crazy. 

While the paint was drying I snipped the flowers using pliers and then wrapped the floral wire around each steam, pushed the flower through and secured it with the wire. 


I then worked the butterflies into the flowers. You have to be really careful with these, they are super fragile. 


After the paint on the letter dried I hot glued some of the wire on the back of the letter and wrapped in around the wreath, securing it in the back. 


Then I added the ribbon to the top and hung it up on my door. 


Not to shabby, if I do say so myself. Thank you again, Michaels, for giving me another adorable project. Scott and his wallet thank you, too. 


Yum Yum Books and the Cheese

Yesterday we went to the UCF Book Festival. The festival is put on every year in the arena and there are a ton of book vendors and activities for the whole family. When we arrived they were just finishing a story time and starting to talk about oyster mats. We took that time to check out some oysters:


Then we headed back into the kid zone to hear the owners of the Yum Yum Cupcake Truck read three cupcake themed stories: Pinkalicious (which Joey told us is based on his life story), If You Give a Cat a Cupcake and Cupcake. 


The kiddos loved the stories, but most especially the sweet treats they got at the end of the stories:


After the book festival we went over to Chuck E. Cheese. If you know me, you know there is a reason we had to go there. I was reviewing their new Say Cheese app for iPhone and Android. The kids thought it was cool that Chuck joined them in their photos:

When we got home for the night we snuggled up and read from our new books that we picked up at the festival.


I know that nobody is surprised that Jill picked a princess book.

Thanksgiving Thursday

  • Jillian who is definitely my little lady. Her photos this week have made me laugh so hard.
  • Family that is super supportive and just all around fantastic.
  • My ladies in 238E. Seriously, I have to brag for a moment. They are both so fantastic and I secretly want to have them flunked out of all of their classes so I can keep them another semester (or two). 
  • The return of the Nurses Ball on General Hospital. No, really.
  • Bagels on Monday, cupcakes on Tuesday, ice cream cake on Wednesday and clearly a much needed run coming up on Saturday.

Homemade Prayer Board

I've wanted to make a verse of the week and prayer board for my family and finally got around to making it this weekend. 

I was originally going to get a cork board and Mod Podge some cardstock on it to look pretty. Then I saw this on clearance at Michael's:


Perfect! Then I grabbed my bright cardstock and picked a verse and asked everyone in the family to write down what they wanted to pray for this week.


My friend Dawn asked me how I chose my verse for the week and honestly, it's just one of my favorites. From here on out though I really want to pull a verse that will focus on what everyone is praying for.

The One with the Light Switch

When we came home from Flower and Garden on Saturday our AC was not working. Scott called our warranty company and then we didn't hear anything. Monday on his way home, Scott called the AC company we normally work with and asked what the deal is. They said they never received the call. We had no air in our house and I was not about to open up all of the windows, for two reasons: 1) we still have damage to our screens and 2) we have a habit of having snakes make temporary homes in our windows.

Can I also mention that it has been in the mid to upper 80's everyday? Yup...awesome. To say I've been a witch with a bad itch would be an understatement. So they finally made it out today and before I tell you how they fixed the problem, let me share this.

Do you remember that episode of Friends when Monica and Rachel lived in Joey and Chandler's apartment, because Chandler's job was not, in fact, being a transpondser, and they could not figure out what the one light switch did? Well, we had this light switch in our laundry room that we could never figure out what it did. Apparently on Saturday the box of Swiffer pads "magically" "fell" off the shelf and switched said switch off. Take one guess what that light switch controls. It has now been labeled.



See, my life really is a sitcom.

Shrimp Étouffée

Scott is originally from Clinton, Mississippi and grew up on not only southern food, but cajun/creole food.  One of his favorite dishes is shrimp étouffée, so I found a recipe on Pinterest and decided to try my hand at it.


What you need:

4 tablespoons butter
4 tablespoons flour
1 cup onion, diced
1/2 cup celery, diced
1/2 cup bell pepper, diced
4 cloves garlic
1 teaspoon thyme, chopped
2 cups shrimp stock (since I didn't have this, I used chicken stock)
1 cup tomato, diced
1 tablespoon creole seasoning
1 tablespoon Worcestershire sauce
1 pound shrimp shelled and deviened
Hot sauce to taste
Salt and pepper to taste
2 tablespoons butter
2 tablespoons lemon juice (about 1/2 lemon)
1/2 cup green onions, sliced
1/4 cup parsley, chopped

What to do:

Melt the butter in a large sauce pan over medium heat, cook until it starts to brown sprinkle in the flour while mixing and simmer until it turns a dark brown, about 10-20 minutes.

Add the onion, celery and peppers and cook until tender, about 8-10 minutes.

Add the garlic and thyme and cook for a minute.

Whisk in the stock, add the tomato, creole seasoning and Worcestershire sauce and simmer for 20 minutes.

Add the shrimp and cook until cooked, about 5 minutes.

Season with hot sauce, salt and pepper to taste.

Mix in the butter lemon juice, green onion and parsley and enjoy over cooked rice.

Scott loved this and I'm pretty proud of my Chicago-style creole cooking. Hope you like it just as much as we did!

EPCOT's Flower and Garden

We finally made it out to Flower and Garden this weekend and as always, had a fantastic time. One of my favorite things about Flower and Garden is all of the interactive things for the kids to do. In honor of Oz, they had carnival games set up for the kids. We were even able to take a photo in front of the famed balloon....or a cardboard cutout of it.


It was just nice to have a weekend where nothing was going on and we could all just hang out. It really wasn't even that crowded, which was even better.


One of my favorite gardens in the world showcase is the tea garden in the UK. They have teacups all over filled with different types of tea and then they have these adorable teapots.


Beautiful, right?! We also had a chance to check out the newly expanded bakery in France. Everyone snagged a delicious treat.

It was so yummy, soooooo yummy!

I hope we have a chance to make it back before they break down all of the gardens. I definitely want to grab some more photos to share with all of you.
