What My Family Ate For Dinner - Week 19

I've been trying to make a point of letting the kids pick a few of our meals each week. Now, Jillian would be happy eating grilled cheese all week, so normally it's Aaron that picks our meals. This week he picked two of the meals, I wonder if you can guess which ones?

Here's what my family had for dinner this week:

Sunday, July 6: Broccoli and cheese stuffed chicken. Aaron LOVES chicken kiev's and this is a healthier version. We love the Barber Foods brand and I love when they are on sale at Publix. We paired this with some brown rice and green beans.

Monday, July 7: Tuna alfredo. This is one of the easiest meals and I try to put this on busy nights. All I do is make whatever pasta we feel like (I used whole wheat penne), light alfredo sauce, frozen peas and tuna. Yum, yum and yum!

Tuesday, July 8: Stuffed potatoes. Scott and I LOVE these! Aaron is not on board with these yet, but I know he will be soon.

Wednesday, July 9: Jambalaya with chicken sausage. I know jambalaya should normally be made with andouille, but for calories (and fat) sake, I sub chicken sausage. I also cheat and use Zatarains.

Thursday, July 10: It was pouring on Thursday night and Scott was running late, so we ordered a pizza.

Friday, July 11: Scott and I had a date night (that included me getting new running shoes!). We hit up Olive Garden and ordered off the Cucina Mia menu. Scott had cavatappi noodles with primevera sauce and chicken meatballs. I had the bucatini with pomodoro sauce and chicken meatballs. So yummy!

Saturday, July 12: We had a pool party at Mimi and PawPaw's and brought in burgers from our favorite local burger place. I love their turkey burgers and zucchini fries!

What My Family Ate for Dinner - Week 18

Another week in the books! Here's what we ate for dinner this week:

Sunday, June 29: We had another cookout at Mimi and PawPaw's house, so turkey burgers and turkey dogs. Yum yum and yum!

Monday, June 30: I found this yummy recipe for baked chicken parmesan on Skinnytaste. I served it with zucchini and it was just amazing. It's so light and quick to make.

Tuesday, July 1: Taco Tuesday! We had ground turkey tacos.

Wednesday, July 2: Scott was held up in a meeting, so by the time all of us got home, we just had whatever.

Thursday, July 3: I love this chicken pot pie recipe from SkinnyMom, but I have to tweak the spices a little. It's missing something, but I'm not sure what.

Friday, July 4: Scott had to work late, so I made some homemade pizza. Publix now carries whole wheat pizza dough, so I let the kiddos pick out their toppings (cheese for the miss and pepperoni with baby bellas for the dude).

Saturday, July 5: To celebrate Scott's promotion (yahoo!) we went to a local New Orleans restaurant called The Big Easy. I chowed down on some chicken and sausage gumbo, jambalaya and beignets(naturally). It was beyond delicious!

I'm going to write another post with some of the things that we eat for breakfast and snacks (lunch is normally leftovers), so stay tuned for that! Enjoy!

What My Family Ate For Dinner - Week 17

Yikes! The weekend got away from me, so I am a little late posting this.

Here's what my family ate for dinner...

Sunday, June 22: We had a hamburger and hot dog cookout at Mimi and PawPaw's.

Monday, June 23: We are on a huge chicken sausage kick right now, so we grilled up some Italian chicken sausage, tossed it with some veggie marinara and whole wheat penne. 'Twas delicious!

Tuesday, June 24: Taco Tuesday! Aaron has been on a Taco Tuesday kick, so we made ground turkey taco meat with nachos. So yummy!

Wednesday, June 25: BBQ Pork Chops with asparagus and mac n cheese. I am in love with Stubb's Hickory Bourbon BBQ sauce, so we brushed the chops with that sauce. This was a really quick and easy summer meal.

Thursday, June 26: There was a pretty bad accident on the way home, so by the time Scott finally made it home, it was a little on the late side to be making dinner. Leftovers it is!

Friday, June 27: We were supposed to have sloppy joes. Something was amiss and we ended up having PB&J's.

Saturday, June 28: We went out for dinner at Bahama Breeze with a friend of Scott's from high school. Scott had a cajun rice dish and I had my favorite, jerk chicken pasta.

I think this is the first week that I haven't linked any recipes. See, sometimes you don't need a recipe to make a great dinner!

What My Family Ate for Dinner - Week 16

Another week in the books and I'm still in a recipe funk. I'm going to go ahead and blame it on the heat.

Here's what my family ate for dinner this week!

Sunday, June 15: Happy Father's Day! Scott and the kiddos went for a fun filled day of swimming and BBQ at his parent's house, while I soothed an upset stomach with toast. It was every bit as exciting as it sounds.

Monday, June 16: Chicken stir fry. I originally just had chicken teriyaki on the menu and Scott transformed it into chicken stir fry. It was super yummy and gave us plenty for leftovers.

Tuesday, June 17: Breakfast for dinner! Seriously, is there anything better than pancakes and turkey bacon for dinner? I mean, real bacon would make it better, but ya know. Aaron boycotted this meal because he did not think it was a real dinner. Tell me that again in 20 years kid.

Wednesday, June 18: Marinated pork chops. I shared this recipe a few weeks ago and we loved it so much we had to have it again this week. I marinated them longer and it made a HUGE difference. If you can marinate them overnight.

Thursday, June 19: "Hey, this weather sucks, let's just order pizza." "Okay."

Friday, June 20: Scott and I were supposed to have a date night, but an incident kept him at work. Thank goodness for leftover pizza.

Saturday, June 21: Chicken Marsala with parmesan orzo and zucchini. Yum! One of my favorite cookbooks is Rocco Dispirito's Now Eat This! series. He takes lots of your favorite foods and slashes calories and fat from them. Perfection.

What My Family Ate For Dinner - Week 15

Another week in the books, and I'll be honest, I'm starting to feel some recipe burnout.

Here is what my family ate for dinner this week.

Sunday, June 8: We went out to dinner with Scott's parents and my Mom. We went to one of our favorites, Abuelo's. I love their carnita enchiladas!

Monday, June 9: After a day at Hollywood Studios, we arrived home to one of our favorites cooking in the slow cooker, buffalo chicken sliders. This is such an easy recipe and is a family favorite.

Tuesday, June 10: Dirty rice with turkey sausage. Aaron loves rice dishes, and this is one of his favorites.

Wednesday, June 11: Root beer BBQ pork tenderloin in the slow cooker. We love this recipe! It is so easy and makes plenty for leftovers.

Thursday, June 12: Chicken ranch tacos. I LOVE this recipe! It is so easy, so delicious and makes plenty for leftovers.

Friday, June 13: Leftover night. Seriously, I don't know how we end up with so many leftovers during the week.

Saturday, June 14: Meatball subs. Again, really simple. I just brown the meatballs and toss into a marinara sauce.

What My Family Ate For Dinner - Week 14

Sorry for the lack of posts this week. We have been enjoying the time with my Mom and have been introducing her to different places around town.

Here is what my family ate for dinner this week...and they are Busia approved!

Sunday, June 1: I found this yummy marinade for pork chops on Pinterest. Scott threw them on the grill with some asparagus and used some reserved marinade for both the chops and asparagus. I also made some Annie's mac 'n' cheese to go with it. This recipe will definitely stay in the rotation.

Monday, June 2: Mexican Quinoa Bowls. This is one of Scott's favorite recipes and if he could make it once a week he would.

Tuesday, June 3: I made one of Aaron's favorites, chicken broccoli alfredo. All you have to do is cook up a couple of chicken breasts, slice them, add to some pasta, toss in some broccoli and light alfredo sauce. It's that simple.

Wednesday, June 4: The kiddos graduated kindergarten, so we went to one of their favorite restaurants for dinner, Chuy's.

Thursday, June 5: We introduced Busia to Aaron's all time favorite meal, turkey burger casserole.

Friday, June 6: Spaghetti Bolognese. I love this recipe and make little tweaks each time I make it. I also used the multigrain gluten free spaghetti from Target (Simply Balanced brand). It's so good! You cannot even tell the difference.

Saturday, June 7: After a hot round of mini golf, we grilled some hot dogs. It was the perfect summer dinner.

What My Family Ate For Dinner - Week 13

One of the things I love about this weekly post is that it keeps us honest. Scott is on a huge weight loss journey and it has caused us to completely reevaluate what we eat. Never in a million years did I think we would eat the way we are now (that's not to say we were unhealthy eaters before).  It's amazing to see the growth these past 13 weeks. I cannot wait to see where we go from here!

Now on to why you're really here...

This is what my family ate for dinner this week...

Sunday, May 25: We celebrated Memorial Day a day early since Scott had to work. We had a late lunch of turkey burgers, turkey hot dogs, beans, chips and salsa, fruit salad, veggies and apples. It's safe to say we burned a lot of that off in the pool.

Monday, May 26: I made black bean burrito bowls and oh my word. They were DELICIOUS! They are so easy to make, too. You can either use quinoa or brown rice, black beans, and literally whatever veggies you want. It's that simple. 

Tuesday, May 27: (Happy anniversary to us!) This recipe is what I like to call stupid simple. It's BBQ chicken melts that literally takes zero time to prep and make. How did I not think of this sooner?

Wednesday, May 28: Aaron is on a noodle kick, so we made shrimp alfredo with broccoli. I think he ate 3 servings. No, really. I just used the Bertolli light alfredo, frozen shrimp, broccoli and whole wheat penne. That simple.

Thursday, May 29: Another Aaron request...Jambalaya. I cannot find the andouille sausage I like at my Target, so I swapped it for chicken sausage. Um, yum! Again, I was lucky I had any of this. Aaron gobbled it all up.

Friday, May 30: Uncle Bob, Aunt Vanessa and sweet baby Jaxson were in town, so we brought in Giordano's. I'm proud to say I can still hold a baby and eat at the same time. Momma's still got it!

Saturday, May 31: Shrimp Boil. That's all I need to say. It is SO good and we just gobble it up.

What My Family Ate For Dinner - Week 12

This week included a lot of leftovers. I feel like every meal we made gave us at least two nights worth of dinners (plus lunches!).

Here's what my family had for dinner this week:

Sunday, May 18: Greek Chicken with Greek seasoned veggies. Everything about this dish was delicious (please excuse my pizza plates).

The trick to this dish is to let the chicken marinade all day and when you make the veggies, add the zucchini at the last minute so it isn't a pile of mush.

Monday, May 19: We kept it simple and had turkey hot dogs. Actually, this was a request from Aaron.

Tuesday: May 20: We still had leftover hot dogs and the kiddos had a pizza party at religious education.

Wednesday, May 21: Aaron also requested tacos for the week, so I made ground turkey tacos. We've been eating out tacos this way for years and we all love it.

Thursday, May 22: Meatball stroganoff. This dish will give you leftovers for almost the entire week, I am not even kidding.

Friday, May 23: You guessed it, leftover meatball stroganoff.

Saturday, May 24: Scott and I were able to celebrate our anniversary a few days early, so we made reservations at Jiko in the Animal Kingdom Lodge. It's one of our favorites. We first ate there on our third anniversary.

For appetizers, Scott had the wild boar tenderloin (ah-mazing) and I had the taste of Africa, which was a sampling of different dips/spreads and breads. For dinner, Scott had the filet with their mac and cheese and I had the monkfish. Holy crap was that monkfish delicious. For dessert, Scott had the lavender citrus creme brulee and I had the bread pudding.

Everything was so delicious!

What My Family Ate for Dinner - Week 11

Another week in the books and another week worth of meals to share. Here's what my family at dinner this week:

Sunday, May 11: Since it was Mother's Day, we went to Bonefish Grill for a late lunch. I had the Chilean sea bass and Scott had a filet. Jill noshed on some mac and cheese and Aaron ate everything that wasn't nailed down.

Monday, May 12: Aaron picked out one of his favorites, dirty rice with smoked sausage. It's such an easy meal to make on a busy weeknight.

Tuesday, May 13: This day was INSANE. Scott had a drill that night, so maybe we had Taco Bell. Maybe...

Wednesday, May 14: I fired up the slow cooker for some buffalo chicken sliders. This recipe is so ridiculously easy and so satisfying. I served it on mini Hawaiian rolls with asparagus.

Thursday, May 15: I may or may not have eaten my feelings in pepperoni and black olive pizza. May or may not.

Friday, May 16: I fired up the slow cooker again for my favorite meal ever, chicken ranch tacos. This meal is so simple and so delicious. It also heats up nicely for leftovers.

Saturday, May 17: We went out for an impromptu dinner with Mimi and PawPaw at Chuy's. Scott and I always get the chicken fajitas for two (we only eat enough for one, but the leftovers are SO yummy!).

I didn't realize until now just how much we ate out this week. Yikes! Better luck next week I suppose.

What My Family Ate For Dinner - Week 10

Another week in the books over here. With school winding down and it being so flippin' hot outside, meals are getting interesting to say the least.

Here's what my family ate for dinner this week:

Sunday, May 4: We went to EPCOT to celebrate the kiddos birthday and I was hoping our gigantic lunch would hold everyone over and we could get by with snacks. Then I remembered my son. So we ordered a pizza on the way home. Not healthy, but ridiculously delicious.

Monday, May 5: Aaron and Jillian were able to pick wherever they wanted to go for their birthday dinner. Being Cinco de Mayo babies, they chose Chuy's. I'm so proud! Scott and I split the fajitas for two and then remembered that we should really just split one order.

Tuesday, May 6: I had acupuncture, so it was every man, woman and child for themselves.

Wednesday, May 7: I found this crazy delicious (and EASY) recipe on Skinny Mom. It's skinny sausage and peppers. Now, being from Chicago, I LOVE sausage and peppers, especially when the tomato sauce is scalding your hand as it runs out of the bun. Oooooh so good. However, since this was a skinny recipe, no bun. To be honest, you don't need it. The only change we made was we used chicken sausage instead of turkey. It saved some calories.

Thursday, May 8: Another Skinny Mom recipe - Sour Cream Enchiladas. Seriously, I don't know what it is about this dish that makes it so delicious.

Friday, May 9: Quinoa Spaghetti with turkey meatballs. Yeah, quinoa spaghetti. I tried the Simply Balanced spaghetti from Target. It's gluten free and made with a bunch of yummy stuff, including quinoa (can you tell I like to say quinoa?). I paired it with their roasted vegetable sauce and some turkey meatballs.

Saturday, May 10: Aaron really wanted chicken kiev's, like to the point he asked Scott to take a
picture of him in front of them at Publix. His wish was granted and I'm pretty sure he thanked me a dozen or so times.

What My Family Ate For Dinner - Week 9

Another week and another child with strep. Sigh...

I honestly have lost track of how many times Jill has had strep this school year. Hopefully we will be able to have her tonsils pulled over the summer so we do not have a repeat of this next year.

Anyway, back to the real reason you're here. This is what my family ate for dinner this week:

Sunday, April 27: Turkey Burger Casserole. I know, this is made biweekly in our house. It is one of Aaron's favorite meals.

Monday, April 28: Brown Rice with Roasted Veggies and Chicken. This was DELICIOUS! Aaron had two servings of it, with all of the veggies. You can really tailor this to your family. We used carrots, green beans, corn and asparagus. It also warms up really well.

Tuesday, April 29: Tuesday's are crazy in our house. Scott and I both had sandwiches (on thin sandwich bread) with our addiction, Angie's White Cheddar Popcorn.

Wednesday, April 30: Zesty BBQ Chicken. This is one of my favorite slow cooker meals. Instead of using hamburger buns, we used the sandwich thins. I served it with some corn and zucchini.

Thursday, May 1: Chicken Broccoli Alfredo. I happened to have a spare jar of light alfredo sauce in the pantry, so I threw that with some grilled chicken and orecchiette pasta.

Friday, May 2: Crescent Roll Pizza Ring. I posted this recipe yesterday. It was pretty easy and seriously delicious.

Saturday, May 3: Ground Turkey Tacos. Tacos are the most popular meal in our house. Naturally, but tacos I mean nachos.

What My Family Ate for Dinner - Week 8

Another week and maybe another week of not the best eating.

Here's what my family ate for dinner this week:

Sunday, April 20: Easter! We had a late lunch of ham, green beans, potato wedges and birds nest cupcakes.

I got the idea for the cupcakes from a friends Facebook post. It was actually a cake and the directions were in Italian. I brushed off my three semesters of Italian and did my best to translate the directions.

For the cupcake version I cheated and used boxed cake mix and canned frosting. I used chocolate sprinkles to create the "nest" and cadbury robin's eggs for the eggs. They were delicious and the perfect dessert for Easter.

Monday, April 21: My favorite part about Easter is the leftovers. I always make hot ham and cheese sandwiches. I put them on King's Hawaiian rolls and made a side of roasted asparagus. Yum!

Tuesday, April 22: Mexican Quinoa Bowl. This has quickly become on of Scott's favorite dishes. We love it the next day, too, which is always a plus!

Wednesday, April 23: It was my birthday so we went out to my favorite Mexican restaurant, Abuelo's. I had my favorite, the carnita enchilada and maybe a margarita...or two.

Thursday, April 24: I had an acupuncture appointment (I KNOW!), so we did leftovers.

Friday, April 25: I met my friend Michelle for dinner at Chili's to celebrate my birthday.

Saturday, April 26: We were supposed to have turkey burger casserole tonight, however, we were in the garage doing a lot of work (you know, when it's 90 degrees), so we opted to have pizza brought in instead.

It's not the worst menu we've had, but it's not the best. I should mention this does not include the various birthday lunches I was treated to. I have a lot of green goodness in my future to flush out all of this!

What My Family Ate For Dinner - Week 7

Welcome to another week of "What My Family Ate For Dinner!" Let's dive right in...

Sunday, April 13: We went to Chuy's with my in-laws. Scott and I order the chicken fajitas for two and really, we should have just ordered a single order and split it. Well, then we wouldn't have leftovers...hmmm

Monday, April 14: Skinny Chicken Pot Pie is one of our favorite slow cooker recipes. With the biscuit, it's only 278 calories per serving. Yeah, it's awesome.

Tuesday, April 15: Ah, taco Tuesday! I use ground turkey instead of beef and La Tortilla Factory tortillas. Well, under normal circumstances I use those tortillas, but I made nachos instead.

Wednesday, April 16: Jambalaya with andouille and fresh asparagus. This is one of my favorite meals and even better as leftovers the next day! I just use reduced sodium Zatarains jambalaya mix to keep it simple.

Thursday, April 17: Sometimes all you want is a burger, so turkey burgers it is! We paired our burgers with some sauteed zucchini and it was perfection!

Friday, April 18: I was at social hour, so the rest of the family enjoyed leftovers.

Saturday, April 19: We kept it simple today because we spent most of the day running around (literally and figuratively), so we had turkey dogs with yellow squash and zucchini.

What My Family Ate For Dinner - Week 6

It was a crazy week, again, but we tried out a few new recipes and had a few of our favorites. Here's what my family ate for dinner this week...

Sunday, April 6: Turkey Burger Casserole made its way back into the rotation. This is one of our most favorite recipes. I paired it with some fresh asparagus to give us an extra green veggie with dinner.

Monday, April 7: I found this recipe for pork tenderloin cooked in BBQ sauce and diet root beer on Skinny Mom and I can safely say it is definitely staying in the rotation. I also cut this recipe in half, there is no way we would eat 4lbs of pork tenderloin.

Instead of using a hamburger bun, we opted for the sandwich thins. I think we are going to start doing that for anything bun related. I'm going to try it with turkey burgers this week, I'll let you know how that works out for us.
The whole meal, with veggies, was under 300 calories for a serving. Boom.

Tuesday, April 8: I made another favorite of ours, white bean chicken chili. This recipe makes a ton and it is so filling. It heats up really well for leftovers, too.

Wednesday, April 9: We had leftovers because of parent-teacher conferences. I have found that we almost always have a leftover night now, which is a good problem to have.

Thursday, April 10: I found this yummy recipe on Pinterest and it's great because it's a one pot recipe. It also has quinoa, which is my new favorite, even though I'm convinced I have it in my teeth after every meal.

This Mexican Quinoa Bowl pairs great with a dollop of light sour cream, some reduced fat cheddar or Mexican cheese and a few tortilla chips.

This also warmed up really well the next day for leftovers.




Friday, April 11: Another Skinny Mom recipe! This Creamy Tortellini with Veggies was SOOOO delicious and filling!

My biggest change to this recipe would be to add some fresh cracked black pepper. It definitely needed some.

What My Family Ate For Dinner - Week 5

We finally got back on track this week (kind of). It was great being away and enjoying all the yummy Southern food, but your waistline can only handle so much of that, right? Here's what we ate this week...

Sunday, March 30: We met up with my niece Lorren and her boyfriend (referred to as "the boyfriend" by the kids). We had a late lunch, so it was just snacks that night.

Monday, March 31 AND Tuesday, April, 1: Meatball Stroganoff with roasted asparagus. I love this recipe, but it makes SO much! We enough for lunch and dinner on Tuesday.

Wednesday, April 2: I found this yummy Pork Stew recipe and it's so simple! Plus, you can customize it to your own tastes.

Aaron had THREE helpings of this and ate every veggie I put in it (mushrooms, carrots, celery, red potatoes, tomatoes and onion).

All you have to do for this recipe is brown your pork chops, chop your veggies, throw everything in your slow cooker with some seasonings and let it cook for 8 hours. Top it with some parmesan cheese and dig in!


Thursday, April 3: Here's where the 'kind of' comes into play. After a pretty crazy day my frolleague (you know, friend who's also a colleague) and I were talking about dinner and she said they were having pizza. I instantly sent a text to Scott that simply read, "Pizza." We were both sold. It was perfection.

Friday, April 4: The 'kind of' continues. PawPaw gave us quite a scare and while Scott met him at the hospital, I grabbed the kiddos and went home. The veggie gumbo we were going to have sat a little too long in the slow cooker. It was not pleasant looking. We both snacked that night.

Saturday, April 5: I found this super stuffed potato recipe on Prevention's website and it is ridiculously delicious. I did cheat and use the microwavable baked potatoes because it is already in the upper 80's down here. The idea of running my oven at 425 for an hour just makes me miserable.

The potatoes are stuffed with broccoli, turkey bacon and a cheese sauce that you make yourself. It was definitely filling, especially since we paired it with a salad.

Aaron even had some of this and enjoyed it.

What My Family Ate for Dinner - Week 4

After a crazy week we finally got back on track in our house. Well, sort of.

Here's what we had for dinner this week.

Saturday, March 8: Planet Hollywood (here's where the sort of comes in)

My brother and his family are in town, so we met up with them for dinner at Planet Hollywood, only because it was the only place that didn't have a wait.

I was happy though, they had a turkey burger and it was divine.

We may have also gone for ice cream after. May or may not.


Sunday, March 9: Ribs in the Smoker

I bought Scott a smoker a few Christmases ago (actually this year I bought him a second smoker, but I digress) and it has been the gift that keeps on giving.

He also made his own BBQ sauce and you bet your sweet behind I smothered my ribs in them.

I also made some baked beans and macaroni and cheese to go with it.


Monday, March 10: Chicken Ranch Tacos

This is one of my favorite recipes to make in the slow cooker. All you need it chicken breasts, 1 1/4 cup of chicken broth, a packet of ranch dressing and a packet of taco seasoning. Yup, that's it.

Tuesday, March 11: Leftovers and such.

Seriously, we had so many ribs left over, we had to keep eating them.

Wednesday, March 12: Skinny Creamy Chicken 

Oooooh Mama is this good! I served this over whole wheat orzo and it totally made the dish. The website suggests to just serve it on its own, but I knew it needed something.

This was a huge hit with Aaron. I'm pretty sure he had two or three servings.

Another simple meal. Scott just grilled some pork chops and made some Archer Farms mushroom risotto.

Friday, March 14: Umm...ya know...stuff

It was social hour at work, so on those nights we just kind of do whatever. Sometimes whatever is in the form of Kraft Mac and Cheese.

What My Family Ate for Dinner - Week 3

This was a crazy week for us. I ran over the weekend and have been prepping for a conference all week, so we needed a bunch of simple recipes that were still fairly healthy.

In case you haven't checked in with Southern Fried Fat Guy, Scott is still doing extremely well with his weight loss!

Here's what we ate:

Sunday, February 23: Teppan Eddo


No, it's not the name of a dish, it's the name of a restaurant in EPCOT. It's a hibachi style restaurant that serves super delicious Japanese food. We were there celebrating Cathy's birthday.

Scott and I both had the chicken and shrimp, Aaron had shrimp (yeah) and Jillian had chicken. Everyone even ate with chopsticks. Well, Jill didn't, but Aaron did. He did an amazing job and didn't ask for his fork once!



Monday, February 24: Dirty Rice with Smoked Turkey Sausage

This was a request from Aaron. Sometimes something really simple is the best meal you can have. All I did was make some Zatarains Dirty Rice mix and add some Jennie-O Smoked Turkey Sausage. Add a veggie on the side and your meal is complete!

Tuesday, February 25: Quinoa Chicken Chili

This is a favorite for Scott and I. One serving is only 214 calories and is packed with protein. My favorite part? All you have to do is put it in the crock pot and walk away. So simple!

Wednesday, February 26: Ground Turkey Tacos

This was another Aaron request. I usually make my tacos with ground turkey instead of beef. Sometimes I use meatless crumbles (like Quorn) or I shred chicken. This is another easy weeknight meal that you can pack with veggies (lettuce, tomato, salsa, etc.).


Thursday, February 27: Pepperoni Chicken

O.M.G. This was SO delicious! I found this recipe on one of my favorite sites, SkinnyMom and cannot wait to make it again! Each serving is 211 calories. We paired it with some steamed broccoli and it was perfect!

Friday, February 28: Turkey Burger Casserole


I know, we eat a LOT of this. Aaron gobbled this up, again (think 3 servings).

This is an old photo, not from last night, but we have started taking the tomatoes out. Only Scott eats them. I just add more zucchini to the recipe and then some on the side.

What My Family Ate for Dinner This Week - Week 2

Apparently this post helps others with their meal planning for the week, so I'm doing this a little early. I'm running the Glass Slipper Challenge this weekend, so it's a short week.

Here's what my family ate for dinner this week...

Sunday, February 16: We cheated and went out to one of our favorite restaurants, Abuelo's.

Scott and I both had enchiladas. He was healthier than I was and had chicken with a ranchero sauce. I was not so good and had a chicken and carnita enchilada. Ooooh carnita enchiladas...

Monday, February 17: Shepherd's Pie

I found this lighter version of Shepherd's Pie on Skinnytaste.


I changed it up a little bit and made it with ground turkey instead of ground beef. Aaron gobbled this up. The recipe says it makes 6 servings, but it seriously made more than that.

Tuesday: MOM's Minestrone

I love to make this recipe in a huge batch and freeze it. It really freezes well and is the perfect last minute meal. Serve it up with some garlic bread and it's pure bliss!

Wednesday: Turkey Hot Dogs

I know, not super healthy, but Aaron did request them.

Thursday: Whole Wheat Spaghetti with Turkey Meatballs

Did I mention I'm racing this weekend? Enough said.

There was nothing glamorous about this menu, but it's all yummy, easy and family friendly.
